Tomato Basil Soup with Flax Cracker Croutons

Yes, while everyone else is shopping and decorating…. it’s time for another Canned Time soup.

 The delicious homemade croutons / crackers add a nice spice and texture to this creamy soup.

 The flax crackers store easily in a sealed container and break up in soup for a crunchy background flavor.  They hold up to the soup and are also great for spreads and dips.  And the soup is so fresh with all those sweet cherry tomatoes.  I really didn’t want to over do the spices to keep that creamy tomato flavor in the forefront.

Tomato Basil Soup
  1. 1 small onion diced
  2. 4 - 5 cups of cherry tomatoes sliced in half
  3. 3 cups vegetable broth
  4. 1 cup non dairy milk (unsweetened or flavored)
  5. 1 tsp sea salt
  6. 1 tsp white pepper (optional)
  7. 1 tsp garlic powder or 2 cloves finely diced
  8. 1/2 tsp red pepper flakes
  9. 2 handfuls of fresh basil leaves, roughly chopped
  10. 1 cup shredded cabbage ( I used Napa for this)
  11. 1/4 cup Rice Vinegar
  12. 1 Tbs. Organic Cane Sugar
  13. Drizzle of Olive oil for the onion
  1. In a food processor, blend all ingredients except the onion and oil until smooth.
  2. In a large soup pot, heat olive oil at medium heat and add in diced onion. Stir to saute until onion has softened, about 5 minutes. Add the tomato puree into the sauteed onions and bring to a boil. Reduce heat to a simmer. Cover and cook for at least 1 hour.

    This soup looks both comforting and delicious and cheers for the flax cracker share :). I am REALLY looking forward to the vegan dulce de leche recipe share later in the week. Hope your canned corn and rolls go well (remember…when life hands you canned corn MAKE SNOWMEN! 😉 )

      Now that would be a crazy snowman…maybe that’s what you’ll have there in Tazmania with the heat?
      My Coconut Dulce de Leche is quite simply fantabulous! I’m trying not to eat it like ice cream by the spoonful but I can say that I’ve been taste testing it a little too much 😉
      Can of coconut, sugar, vanilla, molasses, cook….awesome. It should be posting by morning so if you can’t move after your nacho binge, you can check it out.
      Guess it is Christmas there now so you’re probably already stuffed. Good job Girlfriend. Have a bite for me ♥

        It is Christmas but it is only 9.47am and so I think I might wait a bit till I get stuck into those nachos ;). Can’t wait to see that recipe and will most probably be stuck to my chair too fat to get up but whatchagonnadoeh? At least I won’t miss when you post the recipe :). Have a great day 🙂
