Salted Cookie Butter Fudge

I’m finely into my ‘goal’ pants so I needed a little splurge to keep my ‘healthy eating’ goals going: This fudge will definately serve me well. Cookie Butter is available at Trader Joe’s when they can keep it in stock.  It tastes very similar to Biscoff Spread, but costs about $2.00 less! Cookie Butter at Trader Joe’s is about $3.50 / Biscoff is usually over $5 around here. 8 oz. of Pine Nuts at TJ’s are $7 / my area grocery store sells 4 oz. of pine nuts for over $10 ! Ouch. Definitely try Trader Joe’s if possible or shop online. Salted Cookie Butter Fudge Combine all fudge ingredients in a food processor and blend, pulsing & scraping down sides until a smooth paste is formed.  Chill the dough in the fridge to firm up and then spread out the dough on a non stick surface to about 1/2 inch thick.  Freeze.  Melt 1/2 cup of Cookie Butter.  Pour the Cookie Butter over the frozen fudge.  Freeze again.  Sprinkle with coarse  salt.  Store frozen and wrapped air tight until serving. Raw Vegan Caramels with Chocolate Nut Butter

These Raw Vegan Caramels are adapted from a recipe at Averie Cooks These are beautiful little bites of chewy, sweet goodness. I took Averie’s advise and added some homemade chocolate butter on top just to make them even more perfect. I made a chocolate sauce by blending sugar free peanut butter with cocoa powder and NuNaturals Liquid Vanilla Stevia The main sweetness comes from ground up dates. Make sure if you’re using whole dates to remove the pits. Thanks to NuNaturals, they are sugar free except for the date sugar. When you have the ‘caramel’ dough, flatten it out on a stick free surface to about 1/2 inch thick. Refrigerate to firm the caramel.  I combined the dates with sunflower seeds.  Blend the Sunflower Seeds first and then add in the other caramel ingredients.  I had better success pulsing the blender much of the time until a paste formed. The original recipe calls for pine nuts, but I’m saving money using sunflower seeds but I’m sure that these would be even better using Pine Nuts.
