Vegan Strawberry Nectarine Tart

For the Crust
  1. 20 Dates, soaked at least 5 hours, drained
  2. 1 Tbs. Stevia Powder
  3. 1/4 Cup Oat Cereal (or other whole grain)
  4. 1/2 tsp. Vanilla Extract
  5. 2 Tbs. Lucuma Powder (optional)
For the Strawberry Cream Filling
  1. 1/3 Cup Lemon Juice
  2. 8 oz. Non Diary Cream Cheese (like Tofutti brand)
  3. 1/2 Cup More Fiber Stevia Baking Blend (NuNaturals)
  4. 4-5 Ripe Strawberries
  5. Optional 5-10 drops of red food color
For the Topping
  1. 8 - 10 Ripe Strawberries sliced thin
  2. 4 Ripe Nectarines sliced in 1/2 inch thick slices
  3. Or other fruit in season to top strawberry custard
For the crust
  1. Blend all the ingredients in a food processor or high-speed blender until a smooth paste is formed. Add a tiny bit of water if it sticks too much.
  2. Spread the paste in the bottom of a tart or pie plate. Freeze the crust while you make the cream filling.
For the filling
  1. Cream the Strawberries, Lemon Juice and Non Dairy Cream Cheese until smooth. Add in the Stevia Powder and mix again.
  2. Chill the filling 30 minutes and then pour into the frozen crust. Freeze again until filling is firm.
  3. Top with sliced berries and nectarine slices. Drizzle with a few Tbs. of agave for added sweetness.
  4. Keep frozen until serving.
