I bought my whole Spelt Berries  from Bob’s Red Mill and I grind the flour fresh for breads and cakes in a coffee grinder.  Spelt sprouts make a wonderful side dish used just like you would rice or add the sprouted grains into breakfast cereals, soups…I’ve even blended them into smoothies for added nutrition.  Spelt is also a good alternative to Wheat Grass since many Gluten intolerant people can eat Spelt without any problems.

Sprouted Spelt Banana Bread

Cook Time: 1 hour, 45 minutes

What you will need for this recipe:

  • 1/3 Cup Nut Milk + 1 tsp. Vinegar
  • 1/3 Cup Vegan Butter Softened
  • 6 Tbs. Water mixed w/ 2 Tbs. Ground Flax Seed
  • 1/2 tsp. Sea Salt
  • 1 Cup Mashed Ripe Bananas (1 1/2 cups for sweeter bread)
  • 2/3 Cup Brown Sugar
  • 1 Cup Spelt Flour
  • 1/2 Cup Ground Red Quinoa Flour ( 0r Buckwheat, Whole Wheat, Gluten Free Flour)
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1/2 Cup Chopped Walnuts
  • 1/2 Cup Cooked / Cooled Red Quinoa
  • 1/2 Cup Sprouted Spelt (uncooked)

Instructions

Add all ingredients to a bread maker in the order listed and bake on the 'Sweet Breads' setting.

Makes a 1 1/2 lbs. loaf or about 6 - 7 slices

    No bread maker here but I figure if I just shleck it all together, pour it into a lined loaf pan and bake it at a low heat till it tests clean with a skewer I should be alright. Wish me luck I am going in! 😉

      I got this stackable sprouter and did my first alfalfa seeds in it and they boomed! We had them on top of some Miso for lunch today (hiding from the snow up here) and they were perfect 🙂 Sprouts rule!!!

              I’ve always used the big glass jar with the green screen lid too but this one is for sprouting little seeds like mustard, broccoli or radish. It’s cool, you just poor 2 cups of water on the top layer 2X’s per day and it drains down over all the other seeds and everybody gets a drink. I’ll send you the link for it.

          K. I saw a recipe the you grind up black beans for part of the flour. Just wondering how it would do. I don’t have an electric grinder so my little coffee grinder may not even work for it.
