The tangy cranberry flavor just pops with the sweet Cocao Coconut Butter tastes.  If for no other health reasons, you must try these bars just to experience each lovely bite.  They will keep in the freezer….but not for long the way these babies taste!

Spirulina Chocolate Cranberry Bars
A delicious way to get your daily intake of Proteins, Iron, B vitamins, Calcium. These bars combine cocao, coconut, chocolate, cranberries, tahini and oats for a delectably rich cruelty free snack.
  1. 8 ounces Raw Chocolate Coconut Butter (like Artisana brand)
  1. 1/2 cup Spirulina Green Powder ( I used Spiral Spring brand Choco-Spring )
  2. 1/2 cup organic carob or cocoa powder ( I used carob )
  3. 1 cup roughly ground fresh oat flour
  4. 4 tbs sesame seeds
  1. 1/2 tsp vanilla stevia liquid
  2. 1/2 cup maple syrup
  3. 1/2 cup tahini
  4. 1 cup nut milk ( I used almond)
  1. 1 cup fresh fruit jam ( I used cranberry ) mixed with 2 tbs coconut oil and 1/2 tsp vanilla stevia liquid
  2. 1 tbs. coconut oil for greasing pan (optional)
  3. coarse sea salt for a light, salted sprinkle
  1. Grease a 8 X 5 shallow pan or equivalent.
  2. Blend together the dry ingredients in a medium size bowl.
  3. Blend the wet ingredients and then stir them into the dry creating a sticky thick batter.
  4. Add about 1/2 of the batter to the pan and push flat to cover the bottom of your pan. Freeze the pan while you prepare your jam and cacao topping.
  5. Warm your jam slightly to make it easier to spread. When your first layer of batter has hardened, pour on your jam and spread it onto the batter to make a thin fruity layer. Freeze again for 2 hours.
  6. When the jam layer is hardened, spread on the second half of the batter to top the jam layer. Freeze.
  7. While the layers freeze, melt your Coconut Butter in a bowl of water, stirring frequently to make it smooth.
  8. Pour the Chocolate Coconut Butter on top of the frozen layers and spread to create a smooth topping. Sprinkle with a bit of coarse sea salt. Cover and freeze until serving.
  1. Makes about 20 bite size squares.

    Some of my favorite healthy snacks are so simple – apples and peanut butter. When I’m feeling fancy I like to have some green beans and cashew cheese!

    Angela!!!! I finally got an email that a new blog post was up! It’s been MONTHS since I’ve gotten one, so I deeply apologize for missing any of your posts. These bites look amazing!! And filled with so many wonderful things…like tahini! We absolutely LOVE spirulina! I add it to so many of our smoothies and protein bites – I’ve never heard of this brand before – I’ll have to go check them out. Our current favorite snack is just a small handful of dried mulberries or kale chips 🙂

    Those bars are making my mouth water, girl! They look so scrumptious and I love the healthy ingredients hidden in all of that chocolate flavor. Hmmm, healthy snack…I guess I’m showing my age ;-), but when hunger hits between meals I’ll eat 4-5 prunes.

    Those look fabulous! My snack choices seem to change from season to season. Lately it has been a lot of hummus with carrots or pretzel thins, bananas with almond butter, or popcorn with a blend of seaweed, sesame seed and sea salt sprinkled on it ….and a side of veggie juice. I used to use spirulina daily but have fallen out of the habit, would love to get back to it, especially for the B vitamins!

    I haven’t had spirulina in so long! It was a staple in the pantry of my best friend growing up, and it gives me warm and fuzzies in the same way that typical comfort does for others.
    Right now, I’m loving broccoli, cauliflower, and spinach with some nooch for a snack.

      Strangely I only started to enjoy hummus last year on our trip to Alaska. They gave us these little carry around squeeze packs to get
      through periods of the bus rides when we didn’t have food available and I fell in love. Now I’m thinking…duh? Where was this stuff all my life.

    I am a vegetarian and I have health issues that make it very hard to get my nutritional values that I need. I would have veggies and fruits or another favorite would be roasted red pepper hummus with pita chips or veggies. I would love to try the chocolate cranberry bites. They look yummy and I have never had spirulina in something like this. I usually put it in smoothies. I will definitely need to try this recipe.
