“La-Dee-Da” Cornbread Waffles

I’m new to waffle making but these spicy cornbread waffles really rise to a level good enough for guests, parties or just dinner by yourself  on a comfort zone night ♥

I wanted a spicy batter but I love cornbread that is more like cake.  So I just put it all in one batter.  They are cake-like, especially when eaten fresh off the iron.  If you want to make up some in advance, I’d use a regular oil because the coconut oil that I used will harden some and give the waffles a drier taste….not what you want here.  The batter is pretty quick to mix up so if possible, make them right before your meal for the most moist inside and crispy crannies.


There is a touch of sweet in the batter but I had to go all the way and douse mine with butter and warmed Agave.

“La-Dee-Da” Sweet & Spicy Cornbread Waffles

  • 2 Cups Self Rising FlourSweet & Spicy "La-DEE-Da" Cornbread Waffles - from Canned-time.com
  • 2 Cups Self Rising Cornmeal
  • 1/4 Cup Sugar
  • 1/2 tsp. Chili Powder
  • 1 tsp. Red Pepper Flakes (optional)
  • 2 Flax Eggs (2 Tbs. Ground Flax mixed with 6 Tbs. water) or egg replacer
  • 1/2  cup Oil  (I used Coconut Oil melted)
  • 1 Can Corn, drained
  • 1 Cup Non Dairy Milk + 2 Tbs. Apple Vinegar
  • 3/4 to 1 Cup water

Mix together all dry ingredients.  Mix together wet ingredients and pour over dry.  Stir gently to mix.  Fold batter as little as possible just until the the flours are all wet.  Let batter sit and rise some while your waffle iron is heating up.  Spoon about 1 cup of batter in center of your iron and cook for about 4 – 5 minutes per your iron’s instructions or until the steam has lessened and waffles are lightly browned.  Freeze in sealed bags for storage.  Makes about 5 round (Belgian) waffles or 4 square.  

I believe that this same batter would work fine for baking cornbread in a pan or iron skillet though I haven’t tried it yet.  It is a very fluffy batter full of air from the baking powder and should work fine in a large greased pan.

    I so DON’T own a waffle maker :(…but…I am going to my daughters house for a “Mother and Daughter Cook Korean together” bonding weekend this weekend and they have an ancient old one that they bought from a thrift shop. It’s german and looks like it was built when Art Deco was still a baby BUT it works…it is sitting there waiting for someone like me to christen it and I have THIS recipe to make in it…I am baking these waffles this weekend. I have never eaten a waffle in my life and your recipe will be the very first time that I do 🙂 Wish me luck!

    All those variables scares me a little Fran, I hope you’re not frustrated and take it out on my poor little ‘La-Dee-Da’ respectable waffles? They are like crusty bread with a chewy center…yum!
    And the butter and agave really make them sing…LLLLLAAAAA, hear them?
    So glad you’ll be trying out the iron and if this doesn’t work in them, Annie has TONs of waffle recipes to try. She got me hooked, I’m hoping a more mild response for you since you’re already hooked to Pinterest, hehe 😉

    Okay. Got the dry ingredients mixed together and the waffle iron is staged for tomorrow morning. Didn’t have any corn, but I’m betting they will be mighty tasty anyway. I can almost smell them cooking now…

      So glad you’re trying them and you may have to up the liquid without any corn so they’re still moist but I’m certain you can figure out the mix with all the waffles you’ve created <3
