Humpty Dumpty Hearty 6 Bean Soup
It's a chili, it's a soup, it's a chili, it's a soup....it's delicious!

Ingredients
  1. 1 Can Black Beans, rinsed & drained
  2. 1 Can Pinto Beans, rinsed & drained
  3. 1 Can Gorbanzo Beans, rinsed & drained
  4. 1 Can Pink Beans, rinsed & drained
  5. 1 Cup of frozen Lima Beans (or soaked fresh Limas)
  6. 1 Can of Kidney Beans (or soaked fresh Kidneys)
  7. 1 Cup Black Lentils (uncooked) Optional
  8. 1 Cup of Soaked Pearl Barley - Optional
  9. 3 Quarts of Filtered Water
  10. 3 Tbs. of Vegetable Soup Stock Powder
  11. 1 Can Tomato Paste
  12. 1 Medium size Can of Diced Tomatoes
  13. 1 Large Onion Chopped or 1 Tbs. dried Onion Powder
  14. 1 Tbs. Garlic Powder or 3 diced cloves
  15. 1 Tbs. Sea Salt
  16. 1/2 Tbs. Black Pepper
  17. 1-2 Tbs. Olive Oil
Instructions
  1. Combine all ingredients in a large stock pot.
  2. Bring soup to a boil then reduce to simmer.
  3. Cover and cook for at least 1 hour.
  4. Skim off any foam that forms on top of soup as needed.
  5. Test beans for texture. Serve or freeze or refrigerate.
  6. This soup is thick. Add more water or vegetable stock if you want a thinner soup.

    I am on a real bean jag at the moment thanks to a green smoothie challenge that I am trialling. I wasn’t ever a person to eat a lot of lentils, beans or other pulses but have gotten quite fond of them (as an alternative to starvation they rock! 😉 ) and for the first time in a long time I have a lot more energy thanks to their slow release energy and protein. Cheers for sharing this easy too cook soup that promises a thick hearty filling meal at the end of the day. I would most definately include the barley as it is a much underrated grain and incredibly good for you 🙂 Cheers for this recipe that might just become a staple in winter this year 🙂

      Wow, what a great comment and thanks so much for your love of beans. I’m on a similar Green smoothie quest and have recently found the bean-bug as well. They’re so easy I’m glad that I enjoy the taste. This soup is rather thick with all the goodies in it but each time I warm some up I just add in a little more stock and it’s back to ‘soup’. Great luck to you with your Tumeric, another love of mine 🙂 I guess it’s Friday there so have a great weekend!

      Couldn’t have done it without you. That 1st place winner, 600 Repins, crazy? Soup is always wonderful, it’s my hot smoothie that lets me drink so many veggies and clean out the fridge in the process too 🙂 Thanks again for your help with the prizes!

      The barley gets lost with all those beans but that’s the best way when you can hide the nutrition in with all the great tastes. Hope you really enjoy it if you give it a try, let me know back how you adjusted / improved yours! 🙂
