“Christmas Rice” – Wild Rice with Spinach and Pomegranates

 I saw Somer’s post at Vedged Out about her Thanksgiving menu and her Dad’s Wild Rice, Cranberry and Pine Nut Stuffing and had to try something similar for my holiday menu.  The combination of  hearty Wild Rice and the tang of the Pomegranates really work here.

Somer’s Dad used cranberries to add tang which I’m positive would work here although I might cut down the amount or slice them in half.  You want just a touch of the sweet in my mind anyway.  These Pomegranates are tart like the cranberries and don’t over power the rice and veggies at all.  You will not be tasting candy here in other words.                                                                                                                 Just a perfect blend of tart, sweet and tasty wild rice.

If you’ve never used Pomegranates you’ll be surprised at how fresh and juicy they are…make sure you use them when they are very ripe or they won’t have the right sweet/ tang you’re expecting in a fruit.  I wait until the pomegranate fruit starts to look almost shriveling on the outside before I break the fruit out.  They really can last weeks without spoiling.  Or you could certainly try to find them in the store already to go for you.  I’ve seen them in Whole Foods, they are pricey that way to be sure but you’ll save the work.

One of nature’s perfect products, Pomegranates are very low calorie, have only 26 grams of carb and packed full of potassium,  B & C vitamins along with a full daily dose of antioxidant.

This time of year you can usually find them in most grocery stores for about $2 per fruit.  I’m lucky enough to have several Asian Markets around that carry them all year although they are at their best in the fall / winter months.

Poms will stain if you’re not careful when peeling them so be sure and check out this quick tip on easy ways to get the seeds out:

“Christmas Rice”  

Vegan, Gluten Free

Serves 3-4

1 Box of Wild Rice mix ( I used Near East Brand)

1 Cup of frozen Baby Lima beans, thawed to take the ice off is best

2 big handfuls of fresh Spinach or Kale *blanch the Kale first if using fresh

1/2 Cup of fresh Pomegranate Seeds

In a large pot,  cook the rice package according to directions.  Remove from heat.

Mix in thawed Lima Beans and then add in 2 handfuls of fresh Spinach on top of the Rice/Limas and cover.

Let the rice sit for 5 minutes or so until the Spinach has wilted some and then stir the Spinach in with the rice.

Mix in Pomegranate Seeds and serve.  Great reheated for left overs as well.

Options and Add In’s:  Cranberries instead of Pomegranates, other types of rice would work as long as they are not sticky, corn or other veggies would work as well or even a rinsed can of beans although I like the Limas because they don’t add taste, just nutrition.  This would also work well as a stuffing for whole cooked squash like Acorn or Butternut.
