My husband and I have recently become addicted to a wonderful spice shop that offers a wide array of unusual varieties of your standard kitchen spices.  The one I snatched up to try this last visit was a “Natural High Fat Cocoa” “Strong Dark Chocolate Flavor/ The Richest Grade of Cocoa available in the world today” as the label describes this luscious rich powder.  It s not too much to say that I wouldn’t mind being buried in this stuff…rubbing it between your fingers, it feels like the silkiest baby talc and even completely unsweetened, it’s not too bitter to be sprinkled on top of the fanciest desserts.  I’m impressed with the Penzey’s Spices quality to say the least.

To honor this “Chocolate Bliss” Cocoa, I paired it up with some equally delicious fresh ingredients to compliment the sweet tones in the dark cocoa:  Walnuts, Dates, Blueberries, Blood Oranges, Vanilla & of course, my favorite with chocolate = sour lemons.

I didn’t want the creamy filling to be “hurt your jaws” sour, but definitely TART against the Cocoa.  The vanilla background flavor in the cream combined with the sweetness of a little blood orange juice was the perfect blend here.  Then when you think the cocoa and cream are sweet, the blueberry tang brings your tastes back to the sour lemon tones.

And then to play with your taste buds one last time… a sprinkle of tiny diced lemon peel and raw Cocoa Nibs top off the swirl of flavors.

"Chocolate Bliss" Cocoa Lemon Berry Tart
Print
For the Crust
  1. 1 cup of Walnuts
  2. 1 cup of Chopped Dates, soaked for 1 hour, drained
  3. 1 cup of Natural Full Fat Cocoa Powder
  4. + 1/4 cup of Cocoa for 'dusting'
For the Tart
  1. 8 oz. Vegan Sour Cream ( like Tofutti brand)
  2. 3/4 Cup Almond Milk (or nut milk of choice
  3. 1 cup of NuNatural's Baking Blend Stevia Powder ( Or 1 Cup of Sugar)
  4. 1/2 Cup Fresh Squeezed Lemon Juice
  5. 1/4 Cup Fresh Squeezed Blood Orange Juice
  6. 1 tsp. of Vanilla Extract
  7. Cocoa Nibs and finely diced Lemon Peel for topping
  8. 1 Cup Fresh Blueberries
For the Crust
  1. Combine all ingredients for the crust into a food processor and pulse until a dough ball forms.
  2. Press the wet dough into the bottom of a tart pan, you may have too much if you use a pie size pan, I used a rectangular 8 X 11 and still had a very thick crust.
  3. Add the 1/4 cup cocoa to a small strainer and liberally dust the top of the Nut/Cocoa Crust to cover completely. Freeze the crust to firm while you're making the tart filling.
For the Tart
  1. Combine all the Tart ingredients *except blueberries, cocoa nibs and lemon peel, in a food processor and blend until creamy. Pour filling onto well chilled tart crust and spread to edges of the crust. Chill the tart for at least 1 hour. After the tart filling has firmed up some, press fresh blueberries into the tart. Sprinkle tart with Cocoa Nibs and Lemon peel bits.
  2. Keep the tart covered in the freezer. Thaw at least 30 minutes before serving.

      Yea, when there are so many foods that I don’t have in my diet now, I try to really savor the ones I can still enjoy. This makes up for no longer having Lemon cake with thick chocolate icing…thanks for your comment!
