The sweetie-pie folks over at Dandies All Natural Marshmallows asked me to take a crack at a vegan Valentine’s Day dessert using their tasty little marshmallow gems in the mix.  Glad to right? Of course I’d like to share that recipe with you all but even more so….I got to enjoy this creamy, chocolate cloud of a pie for myself…hard work folks!      Dandies Marshmallows are made with all natural ingredients, contain no high fructose corn syrup or gelatin (they’re 100% vegan!), and are the first ever marshmallow to be Non-GMO Project Verified.  Anyone remember the tale of Goldilocks and the 3 Bears?   Once upon a time, there was a little girl named Goldilocks. She went for a walk in the forest. Pretty soon, she came upon a house. She knocked and, when no one answered, she walked right in. At the table in the kitchen, there were three bowls of porridge. Goldilocks was hungry. She tasted the porridge from the first bowl. “This porridge is too hot!” she exclaimed. This post is featured in the Virtual Vegan Linky Potluck week 4 Last weekend, we went up to Gettysburg Pennsylvania for the day.  Thank goodness we happened to be in the town Arts Building because one of their volunteers just happened to have picked 4 quarts of wild raspberries that morning from a field near their farm.  Totally organic, naturally growing gorgeous raspberries!  When I saw her coming in the doorway with them all, she was looking for a place to set them out to sell.  I immediately asked how much?  $1.50 per Pint.  I said, “Excuse Me?”  I knew very well that any major grocery store right now was selling 1/2 pints of non-organic raspberries for twice that price. “I’ll take 2!” I told her and grabbed my husband, who loves raspberries almost as much as I, and got a $5 bill.  I told her to keep the change and walked away grinning from ear to ear to show him my fabulous find!   At the end of the event, the woman hadn’t sold the other Pints and asked me if we’d take them for free?  UH, Duh ?  So we came home with a boat load of the most…

Creamy Non-Dairy Raspberry Walnut Vinaigrette

    Sharing my all time favorite salad dressing today.     A light and creamy healthy addition to any type of salad.   This post was supposed to be about some delicious spiced carrot cookies.  Obviously, it’s not.  That’s what happens when you scribble recipes on the backs of junk mail envelopes month after month, and then try to match them up with photos weeks later.  The cookie post was, is….all ready to go except I have no idea how much of what I put into them was.  Yikes!  Now it’s back to a new batch and experimentation to get them right again.  They were delicious and I’m anxious to share them with you.  For now, a simple vinaigrette.  This rich, creamy vinaigrette is highly adaptable to different tastes as well.  Add a little more sweet, some red pepper, more vinegar for a sharp tangy background.  It’s up to you but the basic for a great creamy dressing is right here in this version.            Thanks for visiting!  For more Canned-Time.com,  follow me on Facebook,  Twitter,  or Pinterest, subscribe via Email.

And so it begins.  My full month of Vegan food and fun for ‘Vegan MoFo – 2013″  This should be fun! Well, if I had a maid and won the lottery it would be more fun but still…. Featured On: My Mr. Floydy has been cooking up a storm today………….. This pie is creamy like chocolate pudding with a hint of peanut butter.  The raspberry topping adds a perfect sour bite that cuts through the sweet and balances each bite.  Sugar, Dairy and Gluten Free.  It freezes well and is a great breakfast or dessert idea. Mr. Floydy was oh so helpful getting the shots for this one today.  He doesn’t like when something else, even Pie, gets more attention than he does……….. Vegan Chocolate Peanut Butter Pie Crust: 10 Medjool Dates, pitted and soaked for 15 minutes 1 cup Filtered Water (you can use this to soak the dates in) 2 Tbs. Ground Flax Seed 1/4 Cup Powdered Stevia Baking Blend 1 Cup Gluten Free Cereal 1 Tbs. Cinnamon   Blend all ingredients in a high powered blender, pulsing until a rough dough is formed.  Press dough with fingers into a pie pan or iron skillet just onto the bottom. Chill crust while making the pie filling.       Pie Filling: 1 Cup Smooth Natural Peanut Butter, microwave for about 30 seconds to soften 1/3 Cup Sunflower Seeds 1/3 Cup Raisins 1/3 Cup Vegan Dark Chocolate Chips…

Homemade Raspberry Vinaigrette – Sugar Free

Featured on: I’ve had an abundance of Red Wine Vinegar, like 10 bottles, for a year now and had to get them used up somehow.  I use it a lot to make my Spicy Brown Honey Mustard Dips.    But I needed something more….Ah, Ha! …….Raspberries! All the fresh fruit in the stores right now makes me crazy that I can’t buy it all up at once!  And when it see it spoiling, mostly because it’s over priced ….. It really makes me mad!!! Anyway, this recipe could not be any easier.  The basic combination is only 3 ingredients:  Raspberries, Vinegar  and sweetener. Fresh Raspberry Vinaigrette w/ Sugar Free Options Combine 2 Cups of Red Wine Vinegar or Balsamic Vinegar with 1 Cup of Fresh Raspberries in a glass container.  Seal and let it sit for 2 days at room temperature out of direct sunlight Puree the mixture and then add in any of the following: 1 Tbs. Stevia, 4 Tbs. Agave,  4 Tbs. Maple Syrup or other sweetener to taste. Plus 1/4 Cup of Olive Oil. Other add-ins could be:  Red Pepper flakes, salt & pepper, Italian Seasonings, Garlic Powder (about 1 tsp.) Store your Raspberry Vinaigrette in a sealed container in the…
