Oil Free Holiday Options – Green Bean Quinoa Celery Salad

No need to bloat and ache after your Holiday meals these days.       I’m hoping that each of you can enjoy a few days off for your family celebrations this Season.  After years of working full blast through the holiday season, I relish the time off that I enjoy these days.  I still usually wake up before dawn on Black Friday.  These days, it’s to enjoy a peaceful walk through the woods or a Wintery field instead of lining up and/or fighting crowds.  I hope to help out with a healthier Holiday meal that is so quick and easy on Canned Time by sharing my favorite, fat-free, Vegan menu ideas in the next few weeks. First off, I’m sharing a spectacularly healthy side salad, bright enough for anyone’s Holiday table setting.  Serve this delicious hearty salad to your carnivore friends and family and they will absolutely NOT know it’s packed with nutrition.  I added in some dried cranberries to balance out the light, oil-free dressing that holds it all together.  The crispy beans and celery balance out the savory side of the pecans and quinoa.  I love this salad any time of year.  It travels well and tastes better…

I’m on my own here for a few days and it’s just turned cold and rainy here in D. C. for the first time in months so… Soup’s on!!     I made this pot of soup after cooking up some lentils for my salads next week.  I already had some baked spicy Chickpeas for snacking along with some cooked quinoa so those got thrown into the pot as well.  Throw in what ever your favorites are but keep the spices and the lentils in for this scrumptious cold weather supper.

Soba Noodles with Vegan Lemon Picatta Cream Sauce

 Any time you need a delicious fancy dinner to serve or you just want to fill up on a great comfort food meal, try this lemon sauce with pasta.  All you’ll need is a few basics like Lemons, butter, Nut Milk and pasta…and you’re 30 minutes away from sitting down to a great healthy meal that won’t leave you sleepy from carbs.  The sauce is a healthy cousin to the traditional Italian Picatta sauce served with Chicken or Veal and pasta.  A meal I used to enjoy frequently before moving to a plant based Vegan diet.  This version is so much healthier, kinder and actually so much easier as well.  It’s all good!  Soba noodles are usually in with Asian foods in the grocery.  They have Buckwheat flour mixed with wheat usually and take only a few minutes to cook.  This sauce is slightly creamy but definitely not thick like a cheese sauce.  It lets the pasta be the texture of each bite, not the cream.  Very light and flavorful.
