5 Ingredient Crock Pot Cozy Cranberry Apple Granola Crumble

Really wanted to share this before the Easter Holiday weekend but my work got away from me and I didn’t have time.     It’s a wonderfully easy way to make something special without any effort other than layering ingredients in a crock pot and then waking up to the smell of cinnamon and  tasty apple crumble.       A busy morning brunch, family visiting?  This one pot breakfast or dessert makes everyone’s stomach growl without weighing you down or packing on the pounds.  I used raw cranberries in this version and was surprised at how sweet they became after cooking in with the apples and granola.  They are perfectly sour but not so much that you’ll squint with the tartness.   Add in your own fresh fruit to change-up the flavors like blackberries, currents, raisins, dried pineapple?     The possibilities are endless ♥     I’m off from work for a few days and plan on doing a few upgrades to the blog…  wish me luck with the tech ;( If you’re not signed up to receive my posts directly to your email, please sign up below.  I have some great giveaway posts coming up and I’d…

  Way, way back in 2010, prior to becoming Vegan, I stopped using dairy products in my diet.  This drastically improved my life and changed the way I look at foods and my health.  It changed what and how I ate and, along that path, I began looking at natural foods found in natural places, like the woods, fields, creek sides.  I went through about a 2 year phase of researching and tempting my fate at food foraging.  That’s a longer story that would take us places and down eating paths too numerous for this recipe today.  But needless to say, I made some pretty interesting food and plant options along that path.  One of these discoveries was Burdock Root. Burdock Root Flour  The burdock is a plant found in the continents of Europe and Asia. It is easy to find and identify, as it generally grows along fences and roads. In Asia, the taproot of young burdock plant is harvested and eaten as a root vegetable. It has a gummy consistency and is sweet to the taste. It is rich in calcium, chlorogenic acid, flavonoids, iron, inulin, lactone, mucilage, polyacetylenes, potassium, resin, tannin, and taraxosterol.    A few months back now, I received a very special package from a good friend in Oklahoma.  Fresh Oklahoma pecans.  My favorite nut.  A few weeks later….another package.  And this one had a lovely jug of Ohio made, maple syrup, from that same good friend.  Most people know her by just Annie.  I thanked her for such a thoughtful gift to me, and my stomach!  Particularly when she has been up to her eyeballs in new projects, not the least of which is a new cookbook now available for pre-order.  I had to make these precious gifts into the most special dessert ever.  I think I did it too. Maple Candied Oat Pecan Crumble with Maple Cinnamon Baked Pears with fresh tangy Currants  I’ve never seen fresh currants in the grocery before that I know of.  When I saw them at Whole Foods, I knew they’d be a perfect complement to the maple flavors in this dish.  I hesitated to add them to the recipe because they would be hard to find.  Cranberry might be a substitute, unsweetened.  Or cherries?  Something with a little tang.  The currants were definitely a hit and I’ve used them as salad toppings as well.…

Fresh fruit, healthy seeds and a little sweet make this my new make ahead ‘guest worthy’ dessert idea. For this dessert, all thanks go to Brandi, of The Vegan 8 fame, and to my wonderful husband who asked me to make up a ‘veganized’ cobbler a few weeks back.  Now I have the best of both worlds in this deliciously fruity summer time dessert.  Somewhat more crisp than cobbler, somewhat more chewy than a fruit crisp.  But Brandi’s Granola is the true star of this one.  ‘you can make this for me anytime‘ is what I heard back.  YES!  My original attempt at a gluten free cake like cobbler with no egg or gluten failed miserably last month.  Too little flavor.  Too little cake taste.  And the fruit turned into syrup from over cooking it prior to baking the cobbler.  I couldn’t even find the fruit in the dish when I served it up.  So I was very pleased when reading Brandi’s Nut-Licious Granola a few weeks back and it hit me like a rock.  Peanut Butter and Jelly Cobbler.  I had cherries to use up and I HAD to try out that granola.  I didn’t have any almonds on…

This past weekend, we were out shopping and stopped in to check out an Olive Oil and Vinegar infusing specialty store.  It was beyond expensive and I didn’t think of purchasing anything they had (except for a cute little olive plate for $8 I couldn’t resist) but I did get my mind racing on making my own versions of some oils and vinegars.  Most of them need to rest for weeks to reach their peak flavors.  I’ll save those details for a future posting but I couldn’t resist trying out an old favorite, oil and red pepper flakes, with a new bread recipe today.   In a former life, I was on the road for work nearly 10 days every month and I’ll never forget one stressful Italian dinner with my bosses.  We had been sitting in meetings all day and then finally, after 8pm,  got around to getting out to eat something.  The restaurant was packed.  We were all tired and the wait staff couldn’t have been less attentive.  But our long stressed evening did have one high point, for me at least.  One of the managers with us was obviously a native New Yorker familiar with Italian traditions.…

What could be better than crunchy sweet and healthy homemade granola?   Homemade granola that you don’t have to watch every minute to make sure that it doesn’t burn.  Granola that stirs like a dream instead of spilling off of the cookie sheet while you’re trying not to burn your arms on the oven rack. That’s what, yea!! I had to fancy this super easy granola up a bit too by adding in some spicy candied molasses nuts with the mix.  My husband and I both agreed that these candied nuts, boiled up with molasses instead of plain maple syrup were much tastier and far better for your health as well.  Blackstrap molasses is chock full of B6, Potassium, Folic Acid and best of all IRON!!

Annie’s ‘Loaded Muffins’

  I fell in love with this recipe the first time I saw Annie’s post last month for ‘Loaded Morning Muffins with Crumb Topping’. There are just so many luscious flavors, maple, ……nuts, spice and fruit, vanilla, cinnamon….oats, ginger….YUM. I’ve made up similar recipes when I’m trying to clean out the cupboard or fridge.  Sometimes they work out (sometimes not) But these big beauties work great, even if you have to switch out a few items to clean out your own supplies 🙂 I did make a few changes in mine and they worked out fine. I used fresh peaches in place of the apricots & carrots. Used Sweet Potato instead of Pumpkin. And crushed up some granola for the crumb topping. You can find Annie’s original recipe in it’s purely awesome state here. Whether you use fresh fruit or dried the nutrition and flavors of these ‘loaded’ little cakes will not disappoint.  I made up a double batch of batter and froze half of it to experiment soon to make some ‘Loaded’ waffles as well.  If they’re half as good as these muffins turned out, I’ll be loading up on those too.
