Spectacularly Evil  – ‘Cookie Butter Cupcakes’

  “Spectacularly Evil”  I say that only because for the last year and a half, I’ve lived a mostly ‘fat-free’ lifestyle which has allowed me to turn my less-than-healthy vegan diet around and shed all the weight I’d gained in my efforts to go ‘cruelty-free’ 4 years ago.  One hidden food jar, waaaaay back in the bottom caverns of my freezer I have a hidden jar of Trader Joe’s ‘Cookie Butter’ though.  Kind of like ‘Break Glass in case of Emergency’ Although I’m keeping it for some kind of natural disaster as my last bit of happiness before the world perishes, just knowing that I’ll die with a big spoonful of creamy, caramel cookie dough leaves me at peace with my demise.  Cookie Dough, or Speculoos for those outside of a Trader Joe’s realm, is more than just a snack.  It’s in my top 3 loved foods of all time.  Even just a spoonful is too much for me to indulge in these days, only because I could never stop at 1 heaping scoop of this stuff.  I would more likely end up in a corner, smiling like an idiot in a sugar coma if I ever did give into it’s…

 This past month I’ve been concentrating much more on finding unprocessed foods to take on my workday.  It’s challenging to say the least being in a car, sometimes a hot car, all day and trying to eat a healthy fresh meal that will keep me going as well as satisfy my taste buds.  I’ve had a lot of success with homemade bars and balls.  A new favorite is a Chocolate Peanut Protein ball.    They’re so quick and inexpensive…and tasty.  This week, I discovered what will seem like much to simple a meal to share in a post to most.  A kale leaf wrap that I fill with fresh mango, pepitas seeds, a little Justin’s Almond butter (yum) and a couple dates.  This one packs well if nothing else.  And the flavor combination was so delicious I just had to mention my find.    Speaking of finding, on Tuesday I found myself and about 40 other fans of Choosing Raw at a juice bar in D. Fresh fruit, healthy seeds and a little sweet make this my new make ahead ‘guest worthy’ dessert idea. For this dessert, all thanks go to Brandi, of The Vegan 8 fame, and to my wonderful husband who asked me to make up a ‘veganized’ cobbler a few weeks back.  Now I have the best of both worlds in this deliciously fruity summer time dessert.  Somewhat more crisp than cobbler, somewhat more chewy than a fruit crisp.  But Brandi’s Granola is the true star of this one.  ‘you can make this for me anytime‘ is what I heard back.  YES!  My original attempt at a gluten free cake like cobbler with no egg or gluten failed miserably last month.  Too little flavor.  Too little cake taste.  And the fruit turned into syrup from over cooking it prior to baking the cobbler.  I couldn’t even find the fruit in the dish when I served it up.  So I was very pleased when reading Brandi’s Nut-Licious Granola a few weeks back and it hit me like a rock.  Peanut Butter and Jelly Cobbler.  I had cherries to use up and I HAD to try out that granola.  I didn’t have any almonds on…

Any time that you can sneak flowers into your food – go for it. These squares were inspired from a wonderful recipe on Averie Cooks for Cinnamon Oatmeal Date Bars w/ Chocolate Chunks.  I’ve wanted to try Averie’s version, but this is what I had on hand today, so the recipe got changed significantly 🙁   Next time I’ll make her version as I’m certain those Date bars are fabulous! The Banana Graham Cracker Nut Butter Spread was worth making just on it’s own but combined with the chocolate and crispy crackers,  each bite is a smorgasbord of flavors and textures. Banana Graham Cracker Squares w/ Banana Nut Butter Spread For the Banana Nut Butter Spread Filling: 1 1/2 Cups Roasted Peanuts 2 Tbs. Olive Oil 3 Graham Cracker Squares 1 Ripe Banana 1 tsp. of Cinnamon 1 tsp. of Vanilla 1 – 2 packets of Powdered Stevia About 1/4 Cup Almond or nut Milk Combine all ingredients in a high speed blender, pulsing until smooth. Add additional Nut Milk a tsp. at a time until it resembles thick peanut butter. Store the Banana Nut Butter Spread in a sealed container in the fridge for up to a month.  It’s great on apples, toast or just by the spoonful! To assemble the Graham Squares: 6 – 8 Gluten…
