 Winter always reminds me just how tough some days are for our bodies, and souls for that matter, to keep up with the harsh elements they’re exposed to each day.  Here in Washington D. C., we’ve had record low temperatures, overly dry inside air, cold damp outside air to tend with.  It’s rough for our bodies as well as our spirits to keep up with the elements some days and a bowl of warm, healthy soup can always heal and protect.  In the Lime Lentil soup, I have a great way to cleanse myself of toxins, if only for a little while, and help restore my good nature inside and out.

I’m so pleased to be a part of Kristy’s Cookie Swap Party!  I’ve been a fan of Keepin’ It Kind for about a year and always look forward to Kristy’s recipes.  She has a unique way of bringing serious issues to us without being preachy, self-serving or unkind to those of us who are struggling to do the right thing when it comes to eating and respecting animals.  She’s just a true sweetie!  Thanks Kristy ♥ So I’m sharing a new recipe that combines so many of my favorite dessert flavors; chocolate, almond, caramel, vanilla, citrus just to name a few. These bars have of a little of everything in each bite.   The contrasting crisp and creamy, the sour vs. crunchy caramel in the bruleed lime topping all combine for one great cookie treat.  Oh, and don’t forget the chocolate drizzle hiding in between everything else.  Yes, they would be just as tasty without the candied Limes on top of each bar but heck, it’s the holiday season and I’m going all out these days to jazz up my recipes.  I love lime with chocolate and I love that hint of crunchy caramelized Turbinado sugar topping with these bars.  Yea,…

Spinach Mango Pepitas Salad w/ Maple Syrup & Lime Vinaigrette

With all the New Year’s Resolution(ing) going on this month…I wanted to share a scrumptious salad option that will keep your taste buds happy as well as your healthy eating goals.  It’s full of flavor, packed with nutrition and breaks up the monotony of romaine and carrot sticks 🙂 First of all, you’ll need a nice ‘RIPE’ Mango, a juicy lime or 2, and about a 1/2 cup of Pumpkin Seeds (Pepitas) Pepitas (pronounced puh-pee-tuhs) are chock full of nutrients. Pumpkin seeds pack a variety of vitamins. They are particularly high in vitamin K, with 22 percent of your recommended daily value per serving.
