Pie In The Sky from “The Good Karma Diet” by Victoria Moran – A Review and Giveaway on Canned-Time.com

I know that I’ve published an extraordinarily high number of Vegan cookbook reviews in the past year.  21 if you’ve been counting…. The Vegan lifestyle is growing by leaps and bounds and thus:  People love recipes and information on ‘How To’  And I’m honored to be selected by authors and publishers alike to take a preview of an upcoming publication. But this book stands out in the crowd.  First thing I thought…..No pictures!!  And to me that just ment boring!!  – I was WRONG. I got started reading Victoria’s book and just kept on going.  Couldn’t put it down.  I love the flow, the information.  Love the way she writes so plainly and realistically.  She’s writing this one to those less experienced in Veganism.  Those out there who just might try out the health benefits and kindness that come from being Vegan.  I really love ‘The Good Karma Diet’  Victoria gives you all a sneak peek at her book here with an excerpt, recipe and a giveaway to one lucky reader. Blueberry Lemon Loaf – for the Virtual Vegan Potluck

Blueberry Lemon Loaf – for the Virtual Vegan Potluck

For some crazy reason, I always get a little flustered at Virtual Vegan Potluck time.  A lot flustered this event I should say.  Waiting until the last day to finish my post.  And then scheduling the time wrong so it published this morning?  DUH! But it’s as much fun as ever and so great to see the new participants linking up with old pros.  After much unnecessary stress and contemplation this past month, I decided on a new bread recipe for you.  Berries, fresh Lemon Juice and a swirl of cinnamon make this a very yummy loaf.     This Blueberry Lemon Loaf turned out to be a cross between a sweet bread and a  moist, loaf of bread with a soft crust as far as texture.  It’s not crumbly like a cake in other words.  It has the spring back and ‘chew’ of a bread.  The taste though is all cake.  The berries mix with the glaze for a fantastic blend of sweet and sour.   It’s best served warm.   In fact, you must serve it warm to appreciate the glaze and fruity sweetness.  I’ve kept mine in the fridge and then just warmed up 2 pieces at…

It’s a Lemonade kinda day

It’s HOT! Time for a cool drink………. It got hot here in the East way too quickly this year.  I had such a craving today for a lemon drink that I grew up with.   I had to pick up a few choice lemons and stir up a batch of the best lemon drink you’ll ever taste. This drink is a twist on Ice Tea and Lemonade.  You’ll need a jar of Coffee substitute like Cafix Brand.  These coffee substitutes are made from grains, usually barley roasted and sweetened with some molasses. Cafix is delicious hot or cold.  I usually mix some in with my heated Soy milk in the morning.  Just mix up a pitcher of your favorite lemonade.  Then pour in enough Cafix syrup to turn the lemon aide a deep brown.  Some in my family like to add just a little, I like a lot………   To make the coffee / Cafix syrup:  heat about 2 cups of water to a boil and then stir in 1/4 cup or so of Cafix.  Stir until the powder dissolves.   You can keep the syrup in the fridge to use for future batches.  Each time you make up some lemonade, just pour in a…

Soba Noodles with Vegan Lemon Picatta Cream Sauce

Soba Noodles with Vegan Lemon Picatta Cream Sauce

Any time you need a delicious fancy dinner to serve or you just want to fill up on a great comfort food meal, try this lemon sauce with pasta.  All you’ll need is a few basics like Lemons, butter, Nut Milk and pasta…and you’re 30 minutes away from sitting down to a great healthy meal that won’t leave you sleepy from carbs.  The sauce is a healthy cousin to the traditional Italian Picatta sauce served with Chicken or Veal and pasta.  A meal I used to enjoy frequently before moving to a plant based Vegan diet.  This version is so much healthier, kinder and actually so much easier as well.  It’s all good!  Soba noodles are usually in with Asian foods in the grocery.  They have Buckwheat flour mixed with wheat usually and take only a few minutes to cook.  This sauce is slightly creamy but definitely not thick like a cheese sauce.  It lets the pasta be the texture of each bite, not the cream.  Very light and flavorful. This meal just cries out for a few slices of hot toasted homemade bread…uummmmmmmm PrintSoba Noodles with Lemon Cream Sauce 51 Prep Time: 15 minutesCook Time: 30 minutes Yield: 2…
