For those of you who’ve had the opportunity to enjoy a big, fresh Strawberry Pecan Salad drenched in Raspberry or Strawberry Vinaigrette…this jam is for you.  Don’t wince.  Don’t turn away and close the page quite yet.  You’ll be making this jam for your own kitchen as soon as possible…I hope for your sake.      I myself just love a good contrast of flavors in my foods.  And this jam has something for everyone.  Sweet and smooth, when served warm on top of, well most baked goods that I can think of, it will compliment and wow you. ALOHA! Today, just in time for the July 4th celebrations I have some Cool Summer fresh healthy treats for you! Having grown up in the Washington D. C. Metro area, I’ve seen my fair share of July 4th festivities.  My family would drive down to The Mall, early in the afternoon so we could get a spot on the grass near the Washington Monument with a good view of the fireworks and music most years.  Some years, were better than others as I remember.  Some years, the weather would be unbearably hot and humid.  In the late 60’s, there were Hippies, Police scuffles and things were a little less family friendly….  But they all had that swelling of patriotism,  family groups from all Nationalities, hot summer sun and plenty of food and drinks.   Now that I’m still in D.    This dessert is so fun.  If you don’t make it as an Easter treat, be sure to just try out the chocolate pudding recipe.  It is fabulous.  We have it at least once a month and don’t feel one bit guilty about it either.   Avocado, cacao powder, maple syrup, almond milk and a pinch of salt. It’s perfect in every way. I first discovered the idea of avocado chocolate pudding from Gena @Choosing Raw.  I couldn’t believe just how creamy, luscious and similar it was to my memories of dairy filled, stove top back aching cooked puddings.  If you don’t tell anyone that the base is made from avocados, I think its safe to say…they’ll never know.      In this version, I’ve used the avocado shells themselves to make a dessert presentation for Easter.  The shells fit together after filling them with the prepared pudding and then freezing each half until it’s solid.  Then simply fit the two shells back together and secure them with ribbon for an Easter-Egg-Like presentation for your family.  The shells will thaw in about an hour for serving.  The ones shown here were frozen for over 2 weeks prior to the pics and…

    I’m so, so glad that I was lucky enough to have had a Mom who taught me from such a young age about food.   I was in the kitchen as just a little girl, 4 or 5 even, helping, learning.  One thing I always knew each year was that my brother was going to want a German Chocolate Cake for his birthday.  Mom made a two layer, extra thick icing cake for him each year without fail.  Great thing was, the rest of us all benefited from his yearly request.  Me?  I always requested Devil’s food for my birthday (which has since always been related to my nature.)  But big brother Greg always got German Chocolate.     The name pumpkin originated from the Greek word for “large melon” which is “pepon.” “Pepon” was changed by the French into “pompon.”  The English termed it “pumpion” or “pompion.” 1621 – Early American settlers of Plimoth Plantation (1620-1692), the first permanent European settlement in southern New England, might have made pumpkin pies (of sorts) by making stewed pumpkins or by filling a hollowed out shell with milk, honey and spices, and then baking it in hot ashes. An actual present-day pumpkin pie with crust is a myth, as ovens to bake pies were not available in the colony at that stage. Northeastern Native American tribes grew squash and pumpkins. They roasted or boiled them for eating. Historians think that the settlers were not very impressed by the Indians’ squash and/or pumpkins until they had to survive their first harsh winter when about half of the settlers died from scurvy and exposure. The Native Americans brought pumpkins as gifts to the first settlers, and taught them the many used for the pumpkin. Yes, you are seeing this again.  It’s a replay from Memorial Day.  Worth seeing again, and again…. Happy July 4th Weekend !!  What’s on the menu for your holiday cookouts July 4th weekend? May I suggest a few of these goodies……..starting off with a delectable creamy slaw, spiced up with a touch of horseradish. This slaw is simple: 3 cups shredded slaw mix + 6 Tbs Vegan Sour Cream + 4 Tbs Vegan Mayo 6 tsp sugar + 3 Tbs Prepared Horseradish + 1 Tbs Celery Seed +         1/2 tsp Sea Salt + 1/2 tsp Black Pepper +1/4 Cup Rice Vinegar + 1/2 Cup Diced Green Pepper + Sliced Cherry Tomatoes.     This potato casserole has been handed down from my husband’s family now to my family for decades of holiday meals.  Unfortunately, there is almost Nothing nutritious about the original recipe.  I felt the need to finally come up with a Vegan version that I could enjoy for the holidays.  My new version is admittedly still very processed with store bought Vegan cheeses but with my work schedule this month and my close proximity to no less than 5 health food grocery stores, I’ve splurged on convenience and taste for this recipe re-do. So before you start wincing about the store bought ingredients in my version, I’ll share just how ‘un-healthful’ the traditional family recipe is: 2 pounds diced potatoes, 2 cups sour cream, 3 cups of cheddar cheese, 1 can cream of chix soup, 1/2  pound of butter and some cornflakes.   Yea.  Delicious and heart-horrible to say the least. My version came out slightly less tasty.  But you can eat half the pan if you’d like without much guilt at all!

 This year, I discovered and fell in love with Crystallized Ginger.  I discovered it is easily made at home with a dehydrator as well so I can justify eating making it all the time to nibble on….  For this pudding though,  I used Trader Joe’s brand which is just $1.50 per bag and much quicker when you’re having ginger withdrawals and need a quick fix. My homemade version of Ginger Candy is HERE. I tried bread pudding for the first time this year.  It was okay.  I thought I could ginger it up some and make it a tad more nutritious?  Maybe not.  But it does have some good-for-you ingredients in my version and it’s a holiday treat kind of reasoning.  Just don’t eat the whole pan in one day….  I also made the bread for the pudding myself so I could load it up with cinnamon and pumpkin friendly spices.  I won’t give the recipe for that now but it’s basically cinnamon-sugar-loaf on steroids.  Let your bread sit on the counter for at least 2 days to dry out some before cutting up the cubes for the pudding.  Mine actually sat for 5 days due to my work schedule…

Allergy Information: Dairy, Egg, Corn, Soy, Yeast free, Vegan. Can be made nut, gluten free Ingredients ½ cup Semolina flour (or Brown rice flour for Glutenfree) ½ cup dry Coconut flakes 1 Tablespoon Coconut oil (optional. Omit to make Oil-free) 2 Tablespoons chopped cashew pieces (optional. Omit to make nut-free) a pinch of salt Sugar Syrup: ½ cup ground raw sugar 3 Tablespoons water ⅛-1/4 teaspoon cardamom powder Instructions In a large pan, dry roast the semolina on medium-low heat for 6-8 minutes until the color changes and it gets fragrant. Using a blender/processor, blend the coconut flakes to make coarse coconut flour. Add coconut flour, coconut oil, salt and cashew pieces to the pan. Mix well and roast for 2 minutes. One year ago:   Spicy Red Chili Sauce There is a wonderfully creative ice cream recipe on Keepin It Kind.  Its a blend of vanilla and fudge to die for.  Kristy’s  Super Fudgy Marble Fudge Ice Cream was my inspiration for this seasonal variation.  I took Kristy’s  version and switched it to a pumpkin theme.  But without the pumpkin.   All that your tongue really needs to remind it of that favorite autumn flavor is a little clove, some ginger and a lot of cinnamon! There are so many delicious desserts coming up with the holidays  in the next two months,  I wanted a dessert that would compliment  and add to most of them.  It can also stand on its own for a quick after dinner sugar fix. This Pumpkin Spice Latte ice cream foots the bill for me.  Cinnamon, Cloves and Ginger swirled through the vanilla like a flavor rainbow. Cinnamon Red Pear Butter

One year ago: ‘Friday Morning Fog’  I’ve had this fruit ‘butter’ in my “to try” file for some time now and finally gave it a try.  Its really a wonderful texture and about as healthy a spread as you’re gonna get.  My version is adapted from ‘Vanilla Spiced Pear Butter’ from Good Life Eats.   I limited my spices to just Cinnamon.  I also used half the sugar, added some Vanilla Liquid Stevia from NuNaturals and left out the citrus juices.  I had 4 large red pears.  I also left on the peels which are full of nutrients.  Fruit jams are some what of a balancing act in recipes since no two fruits have just the same amount of juice so you’ll have to adjust your batch to your own ingredients.  I really love pears and sometimes have trouble not snacking on too many while trying to cut them up for recipes.  If you let them get just ripe enough they are just lovely for a fresh dessert.  Some times of the year, you’re doing good just to find them in the stores though.  And this fruit butter will get you through those colder months so you can enjoy spreading…

 I live in Washington D.C. and one thing we celebrate in grand fashion each year is Independence Day on July 4th. Although I rarely go down to the Mall for the biggest fireworks show anymore, crowds are not my favorite thing since 9-11, I do like to celebrate with family and some good foods. This time of year that usually includes some summer fresh fruit or veggies. And Bing Cherries are absolutely in my top 10 Summer snacks.  Who knew they were also pretty healthy for you? I can remember each summer growing up, my Mom bringing home the huge bag of cherries and we’d grab a handful, go outside and start gobbling them up and spitting out the pits over the deck. The bag never lasted very long ;( My fancier version here includes two more  favorite foods:  Dark Chocolate and some shredded Coconut flakes.  I also experimented with a Vegan Marshmallow spread I found that is super easy to use and tastes great with the Coconut and the sour of the Bing Cherries.  The Vegan Marshmallow Creme from Suzanne’s that  I used here made the cherries taste a lot like a fruit filled cake.  Not overly sweet but…

 These waffles begin and end with a nice bunch of fresh, just ripe strawberries. Without them, don’t bother…. The waffle batter is not overly sweet, not overly tart.  It’s a light batter and you get bits of sour when your tongue finds one of the fresh strawberries mixed in with the batter.  The Maple Cinnamon Butter is not too sweet either and adds a smooth alternative to the crispness of the waffle edges.   The strongest flavors here are strawberry puree and the cinnamon.  Both combine and swirl around in your mouth to balance out the plain waffle flavor.  Add in a little cocoa powder to the batter for a more dessert like waffle.   What can I say, first I soaked these boys, dried them out, marinated them and then put the heat to them….they’ve been abused and boy are they delish … Fresh, dry Gorbanzo Beans, soaked and sprouted for 3 days are blended with Soy Sauce, some Orange juice, a touch of Wasabi paste and a big blob of Peanut Butter.  Roasted up and served warm.  They’ve got a range of flavors you want more and more of!!   For information on how easy and healthy sprouting can be click here:  Sprout People   Kids can help with the sprouting process and then help with the snacking once they’re roasted up 😉 This batch included 2 cups of raw, dried Gorbanzo Beans, 1/2 Cup Soy Sauce, 1/4 Cup Peanut Butter, 1/4 Cup fresh Orange Juice,  and a Tbs. of Wasabi Paste.   Nothing like ‘guilt free’ healthy and inexpensive snacks….you’ve got to try this one out!

 I saw Somer’s post at Vedged Out about her Thanksgiving menu and her Dad’s Wild Rice, Cranberry and Pine Nut Stuffing and had to try something similar for my holiday menu.  The combination of  hearty Wild Rice and the tang of the Pomegranates really work here. Somer’s Dad used cranberries to add tang which I’m positive would work here although I might cut down the amount or slice them in half.  You want just a touch of the sweet in my mind anyway.  These Pomegranates are tart like the cranberries and don’t over power the rice and veggies at all.  You will not be tasting candy here in other words.                                                                                                                 Just a perfect blend of tart, sweet and tasty wild rice. If you’ve never used Pomegranates you’ll be surprised at how fresh and juicy they are…make sure you use them when they are very ripe…
