Southwestern BBQ Vegetable Hash with @BeyondMeat Crumbles

    My first attempt at using Beyond Meat products went so well yesterday.  I can’t wait now to try out all their other non-meat products in my recipes.  It was kinda weird using ‘meat’ again?  The taste in this hash was spot on.  I originally planned on mixing up just a simple vegetable spicy hash with potatoes, onion and some yellow squash I needed to use.  This turned out much more tasty with red beets, celery, Southwestern seasonings, a tiny touch of liquid smoke, and of course, the Beyond Meat Feisty Crumbles.  I purchased this 11 oz. bag at Whole Foods Grocery.  They were on sale for $4.99 which made them comparable to what a package of lean ground beef would have been for the recipe anyway.  11 grams of protein per serving.  The product’s main component is pea protein.  Who’d a thought?  A very tasty alternative to meat I’d say.  I can’t wait to use this ‘Feisty’ Beyond Meat in chili and Sloppy Joes.  And if I had known the southwestern flavors would be so good, I most likely would have picked up some chips to scoop up my hash with.  It really is a perfect Mexican dish as…

     Some days I get lucky and mix together just the right amount of this and add just the right pinch of that I it all works.  Last month, late one night actually, the recipe gods blessed me with just such an event in creating this ‘Pit’ pie.  The pit was created in a need to top the pie with a luscious blueberry jam I made up.  Not knowing how this whole mixture was going to cook up, I used a rather small 8″ foil pie pan for the bottom and when it baked, the whole baby was filled to the top and then some, yikes!   I had nothing else to do but start spooning out a section of the center of the baked pie so I could add my topping on.  The topping was the whole reason I wanted the pie to begin with.  Fresh, plump blueberries, just waiting to be sugared up into a smooth, gooey spread.  I actually could have just eaten the jam by itself but that would have been unfair to my rather plain and needy baked pie.  And it really would have looked a little suspicious standing in the kitchen on a Saturday…

Fresh Fruit Fast is on!

  So, we’re off to Alaska in August and I have just a few winter comfort meals left on my hips right now.  I’ve started a fresh fruit and vegetable fast of sorts in the past weeks to get myself into tip top shape for our trip at the end of the summer.  This winter’s sub-zero temperatures were anything but comfortable working outside.  And now I’m paying the price of warming my belly with hot baked goods to keep out the cold.   I’ve already dropped 20 but I’d love to fit into some summer favorites for the trip.  Another 15 to go I’m afraid.   My ‘Raw Foods’ mentors:  Gena, Julie and Kristina have all got me convinced that fresh foods are the way to go for maximum nutrition while dropping this extra weight.  I’ve always known the fresh, local produce tastes the best.  But for now, it’s helping to trim down the fat as well as giving me full flavored meals.   I try not to eat much after 2pm.  A salad or bowl of soup is enough to fill me up before bed.  And all the fiber from fresh fruits and veggies is actually making me feel more…

 The red beet goes on here at Canned Time in the second half of the September Vegan MoFo.  Today I’m featuring a deep rich red beet soup that is beautiful on the inside and out.  Fall is suddenly upon us here in the Eastern U.S. and beets are a wonderful part of autumn colors and cold weather veggies.  Winter Squash, Leeks, Beets, Pumpkin, Spinach, all bursting with flavor and nutrition. Just 1 cup of this color bursting soup can fill you up with 37% of your daily Folate needs, 22% of your Manganese needs.  These colorful wonders can help protect us again a number of health concerns including heart disease, birth defects and especially colon cancers.  Pretty healthy stuff here huh?  And particularly more nutritious in a Vegan version of the traditional Borscht, normally laden with Beef broth and sour cream.  My verison is especially good for you with the addition of the beet greens which are normally discarded.  I saw Somer’s post at Vedged Out about her Thanksgiving menu and her Dad’s Wild Rice, Cranberry and Pine Nut Stuffing and had to try something similar for my holiday menu.  The combination of  hearty Wild Rice and the tang of the Pomegranates really work here. Somer’s Dad used cranberries to add tang which I’m positive would work here although I might cut down the amount or slice them in half.  You want just a touch of the sweet in my mind anyway.  These Pomegranates are tart like the cranberries and don’t over power the rice and veggies at all.  You will not be tasting candy here in other words.                                                                                                                 Just a perfect blend of tart, sweet and tasty wild rice. If you’ve never used Pomegranates you’ll be surprised at how fresh and juicy they are…make sure you use them when they are very ripe…

This dish is light, flavorful, nutritious and filling.  The flavor combination of dill and savory mushrooms make a perfect blend and mimic the classic tastes of Beef Stroganoff. And the pepper gives it a punch that wakes up the veggies, then diced pickles surprise your taste buds with a subtle sour background. All without a drop of dairy.  The pickles and dill give you the sour cream taste usually associated with Beef Stroganoff and the mushrooms simulate sliced beef.
