    I’m so, so glad that I was lucky enough to have had a Mom who taught me from such a young age about food.   I was in the kitchen as just a little girl, 4 or 5 even, helping, learning.  One thing I always knew each year was that my brother was going to want a German Chocolate Cake for his birthday.  Mom made a two layer, extra thick icing cake for him each year without fail.  Great thing was, the rest of us all benefited from his yearly request.  Me?  I always requested Devil’s food for my birthday (which has since always been related to my nature.)  But big brother Greg always got German Chocolate. #Easter Veggie Pot Pie with crispy Sweet Potato Crust – V, GF

  Easter Holiday Veggie Pot Pie.  Full of flavor and the colors of Spring.  I sprinkled my crust with a pinch of brown sugar before baking.  It gives the crust very little sweet but helps to harden the bottom.  The sugars caramelize and crispen.  Don’t worry about ‘cooking’ the sweet potatoes in the initial baking either.  The pie will cook for an additional 45 minutes or so after it’s filled and they’ll have plenty of time to cook through by the time its all done.  The crust is pretty simple, the sweet potato grating will burn some calories.  You can use a food processor to shred them if you have a good one.  Mine just makes the shreds too short and mushy so I did mine by hand.  I used one Very large sweet potato to make the 3 cups and had a little left over.  You’ll need to bake the crust prior to pouring in the filling to make it firm.  This isn’t a Quiche though.  It will be more firm if you let the pie cool some, like a lasagna, it holds up better on a plate if it’s had time to sit 30 minutes or so prior…

WE ARE RAISING MONEY TO PROVIDE A DAILY MEAL TO 100 SOUTH AFRICAN SCHOOLCHILDREN FOR ONE YEAR.  Last year in The Giving Tables  event,  I shared a wonderfully delicious meal idea, “The Vegan Value Meal”,  that emphasized the need for us to concentrate on healthy diets as well as inexpensive.  This subject is dear to my heart.  I am more and more concerned about the way advertisers and the food industry promote low nutritional food items for reduced income families.  Fast food doesn’t have to be full of sugars and empty carbs if we educate what foods are really best for our health.   This year, The Giving Table  has partnered with The Lunchbox Fund in a new campaign to feed 100 needy children in South Africa.  Their goal is to provide 1 meal, each day to 100 children while feeding their minds about nutrition as well.  To support this effort, I’m sharing a lunchbox idea of my own which features these lovely, easy, inexpensive and nutritious peanut butter cupcakes.  They are actually so packed with good flavor…

1 year ago I was dehydrating  Cabbage Leaf Chips This year I made 2 trays of dehydrated BBQ flavored Flax Seed Crackers.  So I needed some dip to go with right? You can find this delicious Beet Hummus recipe HERE. For mine, I added in a can of Chick Peas and a little more lemon to make it less thick.  I would add more seasonings if I had just been serving it with veggies but since the flax crackers are bursting with spice and a little heat, the subtle taste of the  hummus was just right. I love how absolutely CRUNCHY the crackers came out.  Gluten free.  Guilt free. PrintBrownie Date Nut Bread with Strawberry Butter Yield: 1 1/2 Lbs. loafServing Size: 1 inch slice This Brownie Date loaf will be more bread like than cake. It’s very dense and filling. The Strawberry Butter goes well with a slice fresh from the bread maker and lightens up the dessert with it’s tang and fluffy texture in contrast to the dense heavy bread. I sliced up my loaf and wrapped individual pieces to take as a mid day snack. “A warm toasty slice of love” This hearty sweet chewy loaf is better than any cold or flu medicine known to mankind.  Okay, well it’s really good though… The crust has enough crispness to balance the chewy buttery inside, the tart raisins balance the spicy sweet cinnamon swirl. If it doesn’t cure what ails you, it sure will lift your spirits after eating a slice…..or two! Maple Syrup Cinnamon Swirl Raisin Bread (Makes a 1 1/2 Pound Bread Maker Loaf) Add ingredients in this order / all at room temperature: 1 1/4 Cups Water 1 Tbs. Earth Balance or Vegan Vegetable Spread 1 tsp. Vegan Coconut Beet Cookies with Chocolate Chips

Coconut Beet Cookies have big Chocolate Chips to sweeten up the veggie-ness of the cookie. I came up with these because I really love the nutrition in beets………..but can’t stand the flavor.  I’ve tried, but it aint happening for me I also wanted a soft cookie that I could do in the dehydrator.  These are chewy but not ‘mushy’ so they hold up well for packing, don’t crumble and keep well in the fridge. I went heavy on the spices to cover the beet taste and also used a couple new products from NuNaturals to sweeten the batter. I used the NuNaturals More Fiber Stevia Baking Blend as a substitute for flour and it worked perfectly to hold the pureed beets together The other NuNaturals sweetening product I tried is new and turned out perfectly with these cookies. It’s actually a probiotic and a sweetener called’ PreSweet’ Tagatose, One of the health benefits of PreSweet is that it is a prebiotic ingredient. PreSweet can actually be browned like sugar…..definately on my list from now on for sugar substitutions.  I sprinkled a little on top of each cookie for this recipe and there is no aftertaste.
