Collard Green Tacos with @BeyondMeat Fiesta flavor crumbles and Cucumber Carrot Nectarine Salsa.  A few years ago, Bob and I wondered into a Mexican restaurant in the old town section of  Frederick MD.  For once, we didn’t have a coupon which is normally our habit for trying out new places.  But we’re glad we found this spot.  The most memorable part of the meal was a simple, spicy salsa on each table that used cucumbers for the base.  It also had tomato and onion but the cucumbers were definitely the dominant flavor and texture.  It took a few chip scoops to get used to that background but we ended up loving the difference they made.  A few bowls later, I told myself I’d have to try making this one at home soon.    Well, it’s been at least 2 years now but I’m finally getting around to making my own version of the cucumber salsa from that day.   More and more lately, I’ve tried to stay away from processed meals, condiments, snacks.   I’ve found the fresher my foods are, the less bogged down I feel at bedtime.  And the less tired I feel during the day.  I have an exceptionally busy month in May for my job and the extra energy I’m feeling from fresh foods is a needed bonus.  I’ve spent some time in the last year studying up on the skills and experience of a favorite Raw specialist, Kristina Carrillo-Bucaram of FullyRaw.com fame.  Even without noticing Kristina’s spectacular inner and outer beauty, anyone would hopefully acknowledge that she’s been extraordinarily successful in her young Raw life.  With such an example to us all, I admit I’ve been seduced by Kristina’s enthusiasm and love of all things fresh and edible.  She brings life to her meals with the rarest of talents, sincere joy in living.  You can read up on her decade of bringing raw food to the nation, including running the largest, non-profit organic food cooperative in the U. Creamy Vegan Avocado Cucumber Soup

 Mmmmmmm.  Soups on!  Another icy, cold Winter day here in the North East but you can warm you soul with this creamy, flavorful cucumber soup.  The ‘creamy’ comes from rich, nutritious avocados, blended together with sautéed fresh vegetables, a pinch of dill and lots of black pepper to bring out the flavors.  I had peppers and celery to use up so that’s what went into this version but any root vegetable or winter squash, corn, carrots, even beans would compliment the avocado and cucumber base.    I love this soup with a crisp cracker or spicy crouton.   It has a fancy presentation but is just as welcoming for a weeknight family dinner.  Blend your cucs more for a smooth consistency or leave some small chunks as I did for texture.  Either way, this soup is hearty enough to be your main dish or use it aside a big fresh salad with lots of hot crusty bread.

Yes, you are seeing this again.  It’s a replay from Memorial Day.  Worth seeing again, and again…. Happy July 4th Weekend !!  What’s on the menu for your holiday cookouts July 4th weekend? May I suggest a few of these goodies……..starting off with a delectable creamy slaw, spiced up with a touch of horseradish. This slaw is simple: 3 cups shredded slaw mix + 6 Tbs Vegan Sour Cream + 4 Tbs Vegan Mayo 6 tsp sugar + 3 Tbs Prepared Horseradish + 1 Tbs Celery Seed +         1/2 tsp Sea Salt + 1/2 tsp Black Pepper +1/4 Cup Rice Vinegar + 1/2 Cup Diced Green Pepper + Sliced Cherry Tomatoes. Yet Another Tomato Soup…. & Crispy Veggie Jerky

Oh no………..it’s warmer outside now and she’s still making Soup…….what the ….?  But wait!!  This one has a twist.   So here’s the real story on my crispy spicy veggie jerky discovery.  Last week, I bought a bunch of salad veggies.  Saturday, I had some time and used the salad veggies to make a soup so they wouldn’t spoil in the fridge.  And Monday, I blended all the remaining soup up, added some more tomato paste, and spread the whole mess onto 3 trays to dehydrate.  Oh wait.  I may have added a little more red pepper flakes to the spread too.  Dehydrated for a few hours and then flipped the hardening spread over to get them nice and crispy.  After about 10 hours, I had the most deliciously crispy, spicy, crunchy snack.  And all from a bunch of old raggity spoiling veggies last week.   Life is good sometimes!   You must try this.  Don’t have a dehydrator?  Just use your oven on it’s lowest temp and keep an eye on it that it doesn’t burn.  Oh, did I mention that your whole house will smell like the Pizza Guy just showed up with a pippin’ hot crusty Italian…

1 year ago I was dehydrating  Cabbage Leaf Chips This year I made 2 trays of dehydrated BBQ flavored Flax Seed Crackers.  So I needed some dip to go with right? You can find this delicious Beet Hummus recipe HERE. For mine, I added in a can of Chick Peas and a little more lemon to make it less thick.  I would add more seasonings if I had just been serving it with veggies but since the flax crackers are bursting with spice and a little heat, the subtle taste of the  hummus was just right. I love how absolutely CRUNCHY the crackers came out.  Gluten free.  Guilt free. Print BBQ Flax Seed Crackers Author: Angela @ Canned-Time.com   Ingredients 2 cups whole flax seeds 1 cup almond meal (use raw almonds for raw options) 10 oz. Crunchy, tangy, sweet, sour….. Fresh! A fabulous, light and healthy side salad.  Keep some of this dressing on hand in the fridge for a quick marinade or salad dressing. Print Simple Asian Cucumber Zucchini Salad Author: Angela @ Canned-Time.com Recipe type: Side Salad   Ingredients fresh sliced cucumber diced zucchini sliced radish shredded red cabbage 2 Tbs tamari soy sauce 4 oz. rice wine vinegar 2 Tbs organic olive oil 1 heaping tsp white miso paste ⅛ tsp powdered stevia or sweetener of choice ½ tsp garlic powder salt and pepper to taste pinch of red pepper flakes or cayenne Instructions Blend the dressing ingredients and pour over prepared vegetables. ‘Raw’ Cucumber Sushi

   I saw this veggie sushi on Pinterest this week and thought I’d give it a try. It’s probably a little easier than rolling your own sushi.  Not much easier, but it’s different and looks nice.  You don’t have to have a rolling mat but it takes a little time to scoop out your cucumbers.  I think next time I’ll add in some rice to help stick things together better.  The taste is very similar to a Nori Sushi when you dip the pieces in a good soy/rice vinegar mix.  Add in some Wasabi and I thought it was pretty right on for a sushi substitute. It’s different anyway.  And obviously can be made completely raw without the rice.    The picture I originally saw in Pinterest called for some lovely micro-sprouts as filler for each cucumber cup.  Unfortunately, I’m fresh out of homegrown sprouts right now and can never justify paying so much for the store bought ones.  I did without here.  But I did add in some Jalapeno strips.  They added a little bite but without the seeds, there wasn’t much heat.  I put plenty of red pepper flakes in with my tamari soy sauce / rice vinegar…

  With the heat of summer upon us, who wants a hot soup of all things?  Well, I do sometimes for my dinner with a side salad.  This light veggie filled soup uses summer vegetables with a light and mildly flavored broth to fill you up without weighing you down on a steamy summer evening.  Pair a bowl of this Corn Chowder up with some sliced veggies with dip and a icy cold beverage and you’ll have a wonderfully nutritious summer meal that doesn’t leave you standing over the stove for hours waiting for the flavors to meld.  You’re not going to boil this one away for hours like traditional chowders or feel stuffed from a heavy cream version like traditional chowders. Fresh summer corn on the cob, a few potato chunks, some diced beets and sliced cucumbers are all this soup needs. And the crunchy spicy croutons make a great topping to meld in with flavors from the broth as well. The croutons can help use up some stale bread from those humid summer days as well.  Homemade croutons are so delicious and easy to fry up in minutes.  Or dehydrate a few bread slices if you’re really trying…

  I’ve recently re-discovered the first food blog that I connected with enough to read for hours:          The Sunny Raw Kitchen The author, Carmella Soleil, is no stranger to the Raw food world.  She brings such grace and creativity to her recipes, you’ll want to make them ALL.  They are delicious works of nutritious art in my mind.  She does for vegetables what Katie does for Chocolate.  And you must check out Carmella’s new companion site as well: Carmellas Sunny Raw Kitchen.  Its new and fun and full of wonderful information about maximizing food nutrition and enzymes. Today I had the pleasure of making one of her Raw soup basics, “Cucumber Dill”   This soup is a swirl of flavors from Cucumber of course, to black pepper and the bitter background of celery.  Then onion, garlic and fresh dill, topped with a little salty Nori make it come alive like no other vegetable soup I’ve had before.  I sound like I’m exaggerating – I’m not.  It is simple and fresh beyond any soup I’ve made.
