Salted Mexican Dark Chocolate Power Balls

    The secret to keeping lost weight off?  Having plenty of delicious snacks around to get you through the mid-morning / afternoon cravings. I made up a big batch of these flavorful balls and keep them handy in the freezer now. The spice is nice.  The salt makes the sweet chocolate pop in your mouth. So many versions of this kind of snack out there. This is just my latest. Make some up and make them your own favorites. Your mouth will never know how good they are for your heart as well as your soul….          Hoping you have a wonderful weekend folks. Spectacularly Evil  – ‘Cookie Butter Cupcakes’

  “Spectacularly Evil”  I say that only because for the last year and a half, I’ve lived a mostly ‘fat-free’ lifestyle which has allowed me to turn my less-than-healthy vegan diet around and shed all the weight I’d gained in my efforts to go ‘cruelty-free’ 4 years ago.  One hidden food jar, waaaaay back in the bottom caverns of my freezer I have a hidden jar of Trader Joe’s ‘Cookie Butter’ though.  Kind of like ‘Break Glass in case of Emergency’ Although I’m keeping it for some kind of natural disaster as my last bit of happiness before the world perishes, just knowing that I’ll die with a big spoonful of creamy, caramel cookie dough leaves me at peace with my demise.  Cookie Dough, or Speculoos for those outside of a Trader Joe’s realm, is more than just a snack.  It’s in my top 3 loved foods of all time.  Even just a spoonful is too much for me to indulge in these days, only because I could never stop at 1 heaping scoop of this stuff.  I would more likely end up in a corner, smiling like an idiot in a sugar coma if I ever did give into it’s…

Ornament Cake Balls – Vegan, Gluten Free w/ Raw Options

I saw these adorable little ornaments while searching for some ‘cake pop’ ideas and had to give them a try.  I picked up some clearance ornaments at Michael’s Crafts for a $1, removed the top metal hooks from them and got to work making up a ‘raw’ batter for my pops. My quick and easy – delicious raw recipe came from Cara over at ‘Fork and Beans’.  Leave it to Cara to come up with a wonderfully nutritious version that tastes as good as it looks!  Check out her Raw Chocolate Cake Pops. After the dough balls firmed up in the freezer, I rolled a few in some sugar crystals and dipped others in melted chocolate. These cute little balls of sweet goodness would be perfect for a party tray or dessert centerpiece for holiday tables.  With all the sweet stuff around this month, you can pop one of these bites without much thought to it ending up on your hips. Store them in a sealed container in the freezer until you’re ready to decorate the tree! Definitely healthy fun food……… Enjoy 🙂
