Vegan Peanut Butter Cocoa Cupcakes – for “The Lunchbox Fund: Feeding South Africa”

Vegan Peanut Butter Cocoa Cupcakes – for “The Lunchbox Fund: Feeding South Africa”

FEED A CHILD, NOURISH A MIND.      ON FEBRUARY 10, 2014,  FOOD BLOGGERS ARE DONATING THEIR POSTS TO SUPPORT THE LUNCHBOX FUND. WE ARE RAISING MONEY TO PROVIDE A DAILY MEAL TO 100 SOUTH AFRICAN SCHOOLCHILDREN FOR ONE YEAR.  Last year in The Giving Tables  event,  I shared a wonderfully delicious meal idea, “The Vegan Value Meal”,  that emphasized the need for us to concentrate on healthy diets as well as inexpensive.  This subject is dear to my heart.  I am more and more concerned about the way advertisers and the food industry promote low nutritional food items for reduced income families.  Fast food doesn’t have to be full of sugars and empty carbs if we educate what foods are really best for our health.   This year, The Giving Table  has partnered with The Lunchbox Fund in a new campaign to feed 100 needy children in South Africa.  Their goal is to provide 1 meal, each day to 100 children while feeding their minds about nutrition as well.  To support this effort, I’m sharing a lunchbox idea of my own which features these lovely, easy, inexpensive and nutritious peanut butter cupcakes.  They are actually so packed with good flavor…

Homemade Natural Face Bronzer

One year ago: Homegrown Green Onions   Last year I glanced at a Facebook update that suggested making a face powder from cinnamon and cocoa.  I gave it a try and it is ….well, not life changing, but money saving and simple.  In just a few minutes, with a couple items from your kitchen, you can mix up a perfect color for your face with no animal testing, no yucky additives, no fancy expensive containers.  Its great ♥ Get yourself a clean container for storing your personalized bronzer mix.  I use a deep glass jar that seals tight for travel and allows me to shake off the extra powder inside the jar to minimize the mess.  Then start experimenting with your skin.  A little cinnamon, a little cocoa powder.  You can also add in some talc if you’d like but I’ve never bothered.  Test a spot or two on the top of your hand and add a little more cocoa for more tan, more cinnamon for a sun kissed look. When I get the color combination best for my face, I pour the spicy mix into my jar with a funnel.  Seal it up and your done! Be sure to…

No Bake Cocoa – Clementine Cheesecake

I have a little voice inside me, maybe you do too most days, that tells me if I put fruit with my chocolate, it’s much better for my body?   These beautiful Clementine Oranges screamed out at my imagination to be paired up with a luscious dark chocolate….the cheesecake is just an excuse to hold the two together in a dessert.  After all, I can’t just plop a bunch of oranges down next to a chocolate bar and say – Enjoy Mom and Dad! I made up this cheesecake as an Anniversary present for Mom & Dad, their 60th.  Neither of them are Vegan, or dairy free for that matter so I really had to step up the flavors so no one would care if it was healthy or not once they took a bite.  Clementine Oranges are really lovely.  Sweet, juicy and 99% seed free!  So they are just perfect for juicing.  The skins are relatively thin but still easy to peel.  If you’ve never had them and don’t like cheesecake, give them a try just for their burst of orange and sweet.  Dark Chocolate speaks for itself.  No tricky adjectives needed…. No Bake Cocoa – Clementine Cheesecake…

“Chocolate Bliss” Cocoa Lemon Berry Tart

“Chocolate Bliss” Cocoa Lemon Berry Tart

Featuring Dark Cocoa Powder from Penzey’s Spices. My husband and I have recently become addicted to a wonderful spice shop that offers a wide array of unusual varieties of your standard kitchen spices.  The one I snatched up to try this last visit was a “Natural High Fat Cocoa” “Strong Dark Chocolate Flavor/ The Richest Grade of Cocoa available in the world today” as the label describes this luscious rich powder.  It s not too much to say that I wouldn’t mind being buried in this stuff…rubbing it between your fingers, it feels like the silkiest baby talc and even completely unsweetened, it’s not too bitter to be sprinkled on top of the fanciest desserts.  I’m impressed with the Penzey’s Spices quality to say the least. To honor this “Chocolate Bliss” Cocoa, I paired it up with some equally delicious fresh ingredients to compliment the sweet tones in the dark cocoa:  Walnuts, Dates, Blueberries, Blood Oranges, Vanilla & of course, my favorite with chocolate = sour lemons. I didn’t want the creamy filling to be “hurt your jaws” sour, but definitely TART against the Cocoa.  The vanilla background flavor in the cream combined with the sweetness of a little…

Brownie Date Nut Bread with Strawberry Butter

A wonderful pair up:  Cocoa, Strawberry, Dates and Butter. Enjoying every little sweet, tangy bite! PrintBrownie Date Nut Bread with Strawberry Butter Yield: 1 1/2 Lbs. loafServing Size: 1 inch slice This Brownie Date loaf will be more bread like than cake. It’s very dense and filling. The Strawberry Butter goes well with a slice fresh from the bread maker and lightens up the dessert with it’s tang and fluffy texture in contrast to the dense heavy bread. I sliced up my loaf and wrapped individual pieces to take as a mid day snack. Not overly sweet and it’s relatively sugar free with the Stevia. What you will need for this recipe:1/2 Cup Stevia Baking Blend (I used NuNaturals Fiber Blend brand) 1/2 Cup High Quality Cocoa Powder 1 1/4 Cup Organic Whole Wheat Flour 1 Cup Chopped Dates soaked in 1 Cup Boiling Water (reserve soak water) 1/2 Cup Chopped Walnuts 3 Tbs. Ground Flax Seed mixed with 6 Tbs. Water) 1/2 tsp. Sea Salt 1/2 tsp. Cinnamon 2 tsp. Baking Powder 1/2 tsp. Vanilla Extract InstructionsSoak chopped dates in boiling water. Vegan Cocoa-Pomegranate Freezer Fudge

Vegan Cocoa-Pomegranate Freezer Fudge

The flavors of chocolate, a touch of orange and a tangy sour bite of the Pomegranate make this ‘good for you’ fudge my new favorite. The contrasting textures of the Pomegranate and the Cocoa Powder leave your tongue wondering ‘Wow, what’s next?” Then you taste the creamy dates and chia seed filled fudge and the whole thing kind of melds together in your mouth…………. This fudge is not too sweet, not to sour, and definitely a healthy choice for snacking!      Click here for how to remove pomegranate seeds   The Cocoa & Pomegranate are a wonderful contrast of  flavors.
