Once I discovered that I could drizzle fresh, even raw veggies with a luscious, gooey non-dairy cheeze sauce without wondering which thigh it would show up on first?  I was happy with life. This sauce is that good.  Okay, maybe not life shattering but it is just that healthy and  versatile.  You’ll never go back to Velveeta once you’ve whipped up a quick batch of cheeze sauce like this one.  My version is adapted from Jill McKeever’s version which is based on a friend’s version who got it from a friend.  Yeah, it’s been around some and now I’m sharing my tweaked version with you all so you can share it with a friend and amaze your family in a few weeks at your holiday meal. You’ll be pouring copious amounts of gooey cheeze on your families veggies with a smile on your face this year. Regular Velveeta cheese contains milk, water, milk fat, whey, whey protein concentrate and milk protein concentrate. These ingredients make up the bulk of the product.       Boy, I kinda went a little crazy this month when the folks at Oriya Organics asked me to work up a recipe using their products.  Crazy good though.  Their ingredients are just superbly nutritious.  What would the holiday season be like without our favorite family traditional foods?  That’s what it’s really all about isn’t it?  Finding time with our loved ones to talk and enjoy the foods we grew up loving and savoring for the fall?  My Mom has the most beautiful set of China that only sees the light of day on 2 days each year.  Thanksgiving and Christmas need to have a special menu for those times together.  Special for all.  These basic dishes I’ve put together have all the flavors of fall without the cruelty and expense of slaughter.  Baked, buttery potatoes.  Creamy Slaw salads.  Flakey crusts dripping with piping hot berries in syrup.  Why bring animals into that mix when the food is so fine without them?    Take a look:   Sliced Red and Sweet Potatoes with a touch of Sweet Peppers.   Adapted from a family tradition from both my husband and mine’s youth, it bakes up in minutes, has endless variations for veggies and will last the week while you rest your feet and enjoy your guests.  Christmas Rice – Wild Rice with Spinach and Pomegranates    Brussels Sprouts with Radicchio in a Brown Mustard Orange Glaze  …

#Easter Veggie Pot Pie with crispy Sweet Potato Crust – V, GF

  Easter Holiday Veggie Pot Pie.  Full of flavor and the colors of Spring.  I sprinkled my crust with a pinch of brown sugar before baking.  It gives the crust very little sweet but helps to harden the bottom.  The sugars caramelize and crispen.  Don’t worry about ‘cooking’ the sweet potatoes in the initial baking either.  The pie will cook for an additional 45 minutes or so after it’s filled and they’ll have plenty of time to cook through by the time its all done.  The crust is pretty simple, the sweet potato grating will burn some calories.  You can use a food processor to shred them if you have a good one.  Mine just makes the shreds too short and mushy so I did mine by hand.  I used one Very large sweet potato to make the 3 cups and had a little left over.  You’ll need to bake the crust prior to pouring in the filling to make it firm.  This isn’t a Quiche though.  It will be more firm if you let the pie cool some, like a lasagna, it holds up better on a plate if it’s had time to sit 30 minutes or so prior…

 Winter always reminds me just how tough some days are for our bodies, and souls for that matter, to keep up with the harsh elements they’re exposed to each day.  Here in Washington D. C., we’ve had record low temperatures, overly dry inside air, cold damp outside air to tend with.  It’s rough for our bodies as well as our spirits to keep up with the elements some days and a bowl of warm, healthy soup can always heal and protect.  In the Lime Lentil soup, I have a great way to cleanse myself of toxins, if only for a little while, and help restore my good nature inside and out.

This summer, we learned how to roll up our own sushi. And now, we’ve tackled fried dumplings and they great! I love making up my own filling and getting the bottoms browned just the way i like.  These take about an hour from start to finish and are well worth it.  Hopefully you can find dumpling wrappers in your local store.  We’re spoiled in D.C. with health food and international markets all over the place but most groceries should have some size and shape that would work for you.  We were even able to find a ‘no gluten added’ wrap. I used sliced leeks are the base for my filling. Along with the veggies, I threw in a little red pepper sauce for flavor.  You’ll just use a small amount but it adds a wonderful creaminess to the dumplings with each bite.  For the red pepper sauce: blend together until smooth, in a food processor, 1 red bell pepper, 8 oz of silken tofu, splash of hot sauce, 1 tsp garlic powder. Last Friday night, my husband surprised me with a fantastic BBQ meal including a Vegan Faux Pulled ‘Pork’ he came up with and a wonderful Red Cabbage Slaw.  They were both wonderfully delicious and healthy.  Perfect for my Vegan MoFo theme.  Check it out:   Just mix a little of the ‘Pork’ mixture with a spoonful of slaw and you’ve got a fabulous sandwich or wrap like I did here. The spicy slaw mixed so well with the BBQ flavors and melded together for one fantastic wrap. We’ve had these 3 times now since Friday.  They are worth the all the chopping!  I fell in love with Miso soup at the same time I fell for sushi.   I love how simple the flavors are.  But being the Super Soupista that I have become since going Vegan, I just had to throw in some other goodies when I mixed up my first homemade batch of Miso. My husband and I spent last Saturday afternoon perusing our Asian Market to gather up all the items we’d need to try our hand at homemade sushi.  Making our first Miso just went along naturally with the whole ‘Sushi Shin-dig’.  The sushi went so well we wondered why we’d been paying so much in the restaurants for it?  It was so fun getting everything laid out on the table and rolling up our favorite things inside.  More on that soon but this Miso soup was a simple part of our Asian meal, and probably the most nutritious as well.  I’m not someone who has limited my Soy intake as some do but there are non-soy Miso products as well.  If you do use Soy Miso, choosing a good organic brand can greatly improve the health benefits for you. Dehydrator Cabbage Leaf Chips

I know we’ve seen a million versions of Kale chips, and maybe even Cabbage too.  But this was a first for me in the dehydrator. These Cabbage Chips came out crispy, spicy and finger licking good.  Not to mention pennies per serving and about 10 calories? Just about 20 hours in the dehydrator at 115 and you have a nutrition packed snack with all the healthy enzymes retained of raw foods. For these chips, I washed 7 or 8 large flat Cabbage leaves and dried them well.  Next I poured about 1/3 cup of  olive oil in a small bowl. I mixed in 1 tsp. of Sea Salt and 1 tsp. of red pepper flakes in with the Olive Oil.  Then I massaged the oil onto each Cabbage leaf to completely  coat the leaf.  Spread them out on the trays and crank up the heat.
