Vitamin A + Beta Carotene + Vitamin C = My A. B. C. Smoothie “Antioxidant Blast in a glass” I first saw this drink on Pinterest so I’m not pretending to be so clever as to have created this magnificent tribute to antioxidants and vitamins, but here it is for you now: 2 Carrots (roasted or steamed) + 1 medium size Sweet Potato (cooked) + 1/3 of a fresh Pineapple + 1 inch of fresh Ginger Chill + Blend + Drink = Power Surge! This kind of easy, fantastically healthy and delicious recipe is a great example of small changes I’ve made to my diet in the past 4 years.  Before eliminating  all dairy, and then all animal products in my diet, it was really just ‘what can I eat so I can continue to go’ and ‘how can I stay as thin as possible’  Today things have changed dramatically for me and my diet.  Living a Vegan Plant based lifestyle is such a great confidence builder for me.  I think more kindly about the world and I treat my body more kindly.  I don’t crave Bacon.  I don’t crave fat filled creamy shakes.  I do crave the energy boost and…

FEED A CHILD, NOURISH A MIND.      ON FEBRUARY 10, 2014,  FOOD BLOGGERS ARE DONATING THEIR POSTS TO SUPPORT THE LUNCHBOX FUND. WE ARE RAISING MONEY TO PROVIDE A DAILY MEAL TO 100 SOUTH AFRICAN SCHOOLCHILDREN FOR ONE YEAR.  Last year in The Giving Tables  event,  I shared a wonderfully delicious meal idea, “The Vegan Value Meal”,  that emphasized the need for us to concentrate on healthy diets as well as inexpensive.  This subject is dear to my heart.  I am more and more concerned about the way advertisers and the food industry promote low nutritional food items for reduced income families.  Fast food doesn’t have to be full of sugars and empty carbs if we educate what foods are really best for our health.   This year, The Giving Table  has partnered with The Lunchbox Fund in a new campaign to feed 100 needy children in South Africa.  Their goal is to provide 1 meal, each day to 100 children while feeding their minds about nutrition as well.  To support this effort, I’m sharing a lunchbox idea of my own which features these lovely, easy, inexpensive and nutritious peanut butter cupcakes.  They are actually so packed with good flavor…

Salted Mocha Caramel Lava Cookies – plus a giveaway

I know we’re all up to our eyebrows in Holiday dressings and pumpkin bars right now…but this cookie recipe is worth stashing in your ‘must try’ folder for 2014.  It’s Awesome. Originally perfected by a young wonderfully talented British baker named Izy, creator of ‘Topped With Cinnamon‘, they are chewy and gooey and overall like a few bites of heaven.  Have a napkin ready to wipe the drool when you check out her video recipe for Izy’s ‘Salted Caramel + Nutella Stuffed Double Chocolate Chip Cookie’ recipe.  It’s Awesome too! Of course, Izy’s version is just perfection.  But then it wouldn’t be natural if I didn’t tinker with the ingredients a bit.  Izy’s recipe is not Vegan.  And I wanted to try something without the Nutella that had more of a Mocha/ Caramel background.  So, like thousands of non-dairy eaters out there, I dropped the eggs and added 2 Tbs. of flax mixed with water.  I used molasses, Vegan butter and ground coffee  instead of the cocoa and used a  caramel sunflower seed butter cup from SunCups.com  for the filling in place of Nutella and the  Cadbury candy.  I also topped mine with some whole pecans that I pressed into the…

Meet Annie – What the heck is a “Virtual Vegan Potluck” anyway?

My first Virtual Vegan Potluck that I participated in last October sent me into a tizzy of sorts. Not necessarily because of cooking or posting a recipe.  But because  here on the East Coast of the U.S. we were bracing for Hurricane Sandy to push her nasty self up the coast. No one knew then how bad, how long or what the power (or lack of) situation would be. Luckily we were spared here in Washington D.C. all but days of dark dreary cold rain. So what I remember of my first Potluck was not being too sure how things would play out and then wondering if I would have electricity to cook or light enough to take photos. I didn’t know Annie Oliverio at all. Or Somer or Jason. And I was pretty nervous about showing off anything Vegan back then as something that anyone else on the planet might actually want to cook for themselves. What I did know was that everything I’d seen on the Virtual Vegan Potluck site looked really fun and cool. The book is worth purchase just for the narration alone but with the variety of foods in the book you’ll love both the jokes and the dishes.  Natalie gives us colorful backgrounds of how she developed each dish and why and how, what and why you should give the recipes a try.  I personally have dog-eared the book to death by now. Just a few on my list to try out: “Venus Chocolate-Pumpkin Muffins”,  “French Fried Tacos”, “Chicago Mix Popcorn”, “Deep Fried Cream Corn” YUM! The book as wonderful pics and illustrations as well (can’t stand a cookbook without ’em)  And it goes into great details on cooking techniques specific to Vegan ingredients and special preparation for each dish.  Really great job for a pro or anyone new to Vegan dieting and plant based meals.  Natalie’s recipes are fun and frugal, nutritious and simple to prepare.  A great guide book for anyone trying to add variety and flavor to their diet. And so it begins.  My full month of Vegan food and fun for ‘Vegan MoFo – 2013″  This should be fun! Well, if I had a maid and won the lottery it would be more fun but still….  Mc Donald’s Quarter Pounder has 750 Calories, 380 of those from fat, 19 grams saturated. Add a large fry and that’s another 500 calories and another 25 grams of fat…..convenience and low cost meals have a high price to pay for families on a budget.  My Vegan ‘Value Meal’ was ready in 15 minutes and came in at just under $4 in ingredients. It’s spicy Chipotle and corn flavors make a burger better than any fast food I’ve tasted and provide great fiber and nutrients without a lot of clean up.   With just 3 grams of fat, no saturated, and 5 grams of fiber per burger, it’s a healthy alternative. They taste just as luscious, messy and juicy as it’s fast food rivals.  Fried up in the same pan that I did the potatoes in, it took just 5 minutes to cook through. The 2 store-bought Black Bean Burgers came 4 to a pack for $2 and will keep in the freezer for months.   The fries came from a huge 5 lbs bag that I got from Sam’s Club for just $3.99.  I used a little olive oil drizzled over the fries and sprinkled them with a  homemade…
