Enlightened Nutrition -My Meal Replacement Week with “Illumin8” from Sunwarrior

I’m sooooo excited to share this past week’s diet log with you all today.  With a lot of help from Sunwarrior’s new meal replacement line, Illumin8, I’ve met and surpassed my weight loss goal and two weeks early to boot!  Today I’m sharing how this line of protein powders can help build your health while still trimming your waist.  Of course, it can also be just a healthy addition to a busy day.  I made so many different drinks and snacks with this stuff in the last week!  Some of these will be staples in my diet from now on.  I tested the Mocha and Vanilla Bean flavors for one week and documented my daily calories and final weight loss.  It was just one week but since I was just 1.5 away from my weight goal I’d set back in April, 2015, my Sunwarrior challenge was perfect timing for me to knock out those last couple pounds by May 1st.  Here’s how things went for me this week: On Friday, I had a short work day but still started out before 5 AM so I kept my first Sunwarrior meal replacement meal as simple as 1 scoop of Mocha Illumin8…

ALOHA! Today, just in time for the July 4th celebrations I have some Cool Summer fresh healthy treats for you! Having grown up in the Washington D. C. Metro area, I’ve seen my fair share of July 4th festivities.  My family would drive down to The Mall, early in the afternoon so we could get a spot on the grass near the Washington Monument with a good view of the fireworks and music most years.  Some years, were better than others as I remember.  Some years, the weather would be unbearably hot and humid.  In the late 60’s, there were Hippies, Police scuffles and things were a little less family friendly….  But they all had that swelling of patriotism,  family groups from all Nationalities, hot summer sun and plenty of food and drinks.   Now that I’m still in D.      I’ve come to the conclusion lately, or accepted the realization that I don’t really enjoy smoothies as much as the rest of the world.  I’m thinking that I really should be more of a juice person.  And just accept myself as I am.  No guilt. One year ago I gobbled up a  bowl of this:    Kale and White Bean Soup My Kale saga continues this October in a much more chilled state.  This baby Kale mixes with creamy coconut and berries and blends into my favorite smoothie of the season.  Its detoxifying properties are perfect to gin up the body’s healthy state prior to those Holiday meals just around the corner.  Plus, it tastes great.  I hadn’t used any ‘baby’ Kale until now…tons of baby Spinach but not Kale. Who would have ever thought that these beautiful delicate little leaves were related to the stuff thrown onto so many restaurant plates as an awful garnish?  It really seems like a different animal.  I’ve been nibbling on the fresh baby leaves since I got it home this week. It mixes its sweetness in with the creamy coconut to make a rich, thick & satisfying drink, loaded with good stuff!  If you’ve ever tried growing your own mint in the yard or in a pot…you know for sure that it likes to spread, and spread.  This innocent little fresh herb can double and triple in size over just a few weeks without much care.  I started this plant in May.  I put it in a pot so that I could keep it under toe with some restraint.  I didn’t want to end up with a Mint Lawn! I’ve cut it back probably 5 or 6 times since then and it’s still growing strong in my office window.  It enjoys the morning sun from dawn until about 11am and after that the room is cozy warm.  Mint heaven.    If you’re at all stingy  frugal like me, you can’t bear to take the time to make something and then just throw it out when it’s too much to use up.  So I made up my mind I would find ways to use up my mint.   I do love Chocolate Chip Mint Ice Cream 🙂  But my husband doesn’t and even so, a whole gallon will only use up a small bunch of Mint.   A funny thing happened to me when I ventured into making my own homemade crystallized ginger candy this week. I discovered Ginger Pear Tea ♥   This candy is simple to make.  Just slice up some fresh ginger into thin strips, boil it for 30 minutes, add sugar, dehydrate, eat!  A wonderful thing happens  when you pour off the liquid you’ve been softening up the ginger in.  It makes a fantastic tea.  I had yet another overly ripened pear again so I added some juice from the pear  in with the ginger water.  Add a little stevia and BOOM! A spicy rich tea that is even good for you.  Between the candy and the tea I am loving my ginger this week!  I purchased a small 4 oz. jar of crystallized ginger last month from Pensey’s and nibbled away at a little each day.  At $4 I felt the need to conserve my cravings no matter how deliciously healthy the bits were.  But now its all mine at only pennies per cup.  Its ginger all around and as much as I’d like.  I love the spicy sweet and the chewy texture of the candy.  The tea gives it’s own…

Healthier Iced “Coffee” Beverage – Dairy, Caffeine and Sugar Free

Reposting a popular drink recipe from last year.  Still one of my all time favorite things to gulp sip on anytime of day…. This is my daily, sometimes bi-daily …..tri-daily? ….drink this summer. It’s so refreshing, mildly sweet, and easy to make. The ingredients can be adjusted to your own liking. Substitutions in Nut Milks and coffee can be made. I like it just as it is though……………no sugar, no dairy, no fuss! I drink the same thing when it’s cold too………just warm it all up instead of adding Ice. The proportions I’ve worked out are: Cafix is available at iHerb and most health food stores. For the syrup: Boil 2 cups of water. Dissolve 2/3 cups of Cafix Coffee Substitute (or instant Coffee)  into the hot water. Add in a few Tbs. of Cocoa Powder for a MOCHA flavor. Add in sweetener of choice. (I add about 1 tsp. of Liquid Vanilla Stevia in mine) Store your syrup in a sealed container in the fridge.  Or pour syrup into ice-cube trays. Simplicity in life is best. It calms and keeps prospective. This drink is soothing and simple.  Mildly sweet with a pinch of peppermint. The peppermint will aid with digestion after a meal. The orange, well orange is so full of nutrients and good flavor it’s hard to limit it to words. An orange has over 170 different phytonutrients and more than 60 flavonoids, many of which have been shown to have anti-inflammatory, anti-tumour and blood clot inhibiting properties, as well as strong antioxidant effects. Peppermint Orange Tea Juice of 2 medium oranges 1 Tbs. of crushed Candy Canes or 1 – 2 drops of NuNaturals Brand Peppermint Stevia About 4 oz. filtered water Heat and enjoy! Makes 1 6 oz. serving. Optional additions:  1 Green Tea bag, sprig of fresh mint, dash of ginger, dash of cinnamon, Powdered stevia to taste. Vegan Chocolate or Vanilla Oat Bran Milk

    Oat Bran Milk Add 1 cup of water to 1/4 Cup Oat Bran Cereal.  (Substitutions include:  Oats, Steel cut Oats, Bran, Barley, Wheatgerm etc.) Heat for 2 minutes in the microwave or on stove top until oats have softened. Pour the Oat / Water mixture into 2 Cups water.  Add in flavors:  1 tsp. Stevia Powder 1 tsp. Vanilla Extract And 1 Tbs. of Cocoa powder for Chocolate Milk. Pinch of Sea Salt. Blend or Food Process for 2 minutes on high. Pour the mixture through a strainer into a glass container. Refrigerate up to 5 days.  Use in smoothies, cooking, baking or heat a cup for a morning drink. The oat bran left in the strainer can be frozen and used in cookies, cakes or breakfast bars for added nutrition. Oat Bran leftovers strained out of liquid can be frozen and used in future cookies, pie crusts, etc. Great substitute for Soy, Nut or Coconut Milk and at about .20 per 8oz. glass?  Great savings as well.
