My ‘Breakfast In Bed-Festival’ this year is really just a sneaky way of sharing my favorite Vegan bloggers best breakfast recipes with you all and having a bit of competitive fun all the while. As I have said
too many lots of times before, I leave out for work in the pre-pre-dawn hours, more like the middle of the night for some, I’m sure. I don’t get the luxury very often to enjoy a wonderfully fresh home made breakfast to enjoy in the comfort of my home. So I’m hosting a little monthly highlight this year of the best of the best in healthy breakfast ideas for days when I am able to spend more time enjoying breakfast. I’ve asked 12 of the most creative, health conscious and economically minded bloggers to each share 1 breakfast that highlights both their own website and their own ingenuity for eating healthily, kindly and creatively. At year’s end, we’ll have a little vote on which month’s posting you all enjoyed the most and congratulate the winner with a few kind words and some prizes. “Mom and Baby Breakfast: Peach-Ginger Green Smoothie”
Hi there, Canned Time readers! I’m Becky Striepe from the site Glue and Glitter, and I am so thrilled that Angela has asked me to take part in her Breakfast in Bed event! My goal is to make vegan cooking and crafts accessible to anyone, so I wanted to share a simple, time-saving breakfast recipe. Feeding myself and my 10-month-old baby can be challenging, so I’m always looking for recipes that we can enjoy together. Preparing one meal beats preparing two every time.

This green smoothie recipe is a great baby breakfast that you can eat too!
Darrol Henry had his first green smoothie this week, and he LOVED it! After seeing what a bright green color this recipe produced, I was worried that Darrol would reject something so green-tasting, but he basically chugged this out of his big boy cup!
In the photo below you’ll see him holding a sippy cup. It may even look like he is drinking his green smoothie from this cup, but don’t be fooled. My child refuses to hold a bottle or use a sippy cup. I keep trying, but I ended up having to take the lid off of this and tipping the smoothie carefully into his mouth. He loves drinking this way. It’s very cute but impossible to photograph.
This green smoothie recipe is based on one in my book 40 Days of Green Smoothies. I scaled it up a bit, so there’d be enough for me and Darrol to share and subbed ground ginger for fresh to save time. I also omitted the ice, because I wanted this green smoothie recipe to be thin enough for a sippy cup straw. A gal can dream, right?
- 1 banana
- 1 tablespoon flax meal
- 1 cup water
- 1/4 teaspoon ground ginger
- 1-2 leaves raw kale, ribs removed
- 3/4 cup frozen peaches
- Put everything into your blender or food processor, and puree until smooth. Serve yours in a grown-up glass and give yours to your baby in a cup or sippy cup.
