I’ve wanted to try Averie’s version, but this is what I had on hand today, so the recipe got changed significantly 🙁 Next time I’ll make her version as I’m certain those Date bars are fabulous!
The Banana Graham Cracker Nut Butter Spread was worth making just on
it’s own but combined with the chocolate and crispy crackers, each bite is a smorgasbord of
flavors and textures.
Banana Graham Cracker Squares w/ Banana Nut Butter Spread
For the Banana Nut Butter Spread Filling:
1 1/2 Cups Roasted Peanuts
2 Tbs. Olive Oil
3 Graham Cracker Squares
1 Ripe Banana
1 tsp. of Cinnamon
1 tsp. of Vanilla
1 – 2 packets of Powdered Stevia
About 1/4 Cup Almond or nut Milk
Combine all ingredients in a high speed blender, pulsing until smooth.
Add additional Nut Milk a tsp. at a time until it resembles thick peanut butter.
Store the Banana Nut Butter Spread in a sealed container in the fridge for up to a month. It’s great on apples, toast or just by the spoonful!
6 – 8 Gluten Free / Vegan Graham Cracker Squares
1 Ripe Banana, Sliced on the diagonal
8 oz. Vegan Dark Chocolate, divided ( half shredded for topping, 1/2 melted)
Spread a small dollop of Banana Nut Butter Spread on each Graham Cracker bottom. Add 1 Banana slice to each square on top of the spread.
Spoon a small drop of melted chocolate on top of the spread on each cracker
Top each Graham Cracker Square with another square, pressing very gently down to secure the top cracker into the chocolate. Place each square into the refrigerator to set the chocolate while you grate the remaining chocolate (reserve some of the melted chocolate)
After the squares have chilled some, drizzle the tops of each with some of the melted chocolate. Sprinkle a little of the shaved chocolate on top of the melted chocolate on each one.
Chill again to store or serve. Freeze wrapped squares covered.
These squares are just delicious! Serve chilled or at room temperature…with a napkin! They would be just as delicious without the shaved chocolate….but it does fancy them up a bit.
If you can make your own graham crackers, that would be even more special. Here’s a great recipe for a healthy graham cracker from Jessica at Chockohlawtay
A healthier version of ‘Smores’ with much less sugar, no dairy, no Gluten?
You can justify each bite!
