These days, Kale is available just about everywhere.

If you’re not quite sure just what to do with this King of nutrition, here’s a lovely simple, soup for you to try.  

It’s perfect for any night of the week and fancy enough for any guest.  Fixes up in a flash and will make just about anyone a true Kale believer.

Ingredients
  1. 2 Tbs. of Olive Oil
  2. 1 28 oz. can Tomato Sauce
  3. 1 8 oz. can Tomato Paste
  4. 1 large bunch of Kale, I used Lacinato this time, washed and chopped
  5. 4-5 small Sweet Peppers sliced
  6. 6-8 large Radishes, halved
  7. 1 Sweet Potato sliced in 1/2 inch pieces
  8. 1 can of Corn or 2 cups of frozen Corn
  9. 1 Red Onion diced
  10. 3-4 cans of White Beans rinsed ( I used Navy and Cannellini)
  11. 6 Cups of filtered water
  12. 3 Vegetable Bullion Cubes
  13. Spices to taste: I used 1 tsp. Sea Salt, 1 Tbs. Red Pepper flakes, 1 Tbs. Garlic powder, 1 tsp. White Pepper
Instructions
  1. Heat Olive oil in a large stock pot or Dutch oven. Saute the diced onion until tender. Add in the water, bullion cubes and seasoning.
  2. Add in all the vegetables and tomato sauce / paste. Increase the heat to high and bring the soup to a boil.
  3. Reduce the heat down to a simmer and add in the beans.
  4. Cover and simmer until the sweet potatoes are tender or until you're ready to eat. I had this batch on the stove for about 5 hours on low. Freeze leftovers for quick meals on cold nights.
